Carben is located in Hintonburg and thrives from the vibrancy and support of the community. The restaurant is named after the owners Caroline Ngo and Kevin Benes. It is a play on carbon, which is a compound found in all living plants and animals.



The food at Carben is expressive, modern and ever evolving. We are inspired by local and international ingredients and cuisine. We are always challenging ourselves, our staff and our customers. We love collaborating our food with craft cocktails which are created with the same intensity as our food.



The space was designed by Shannon Smithers-Gay from one80 Design. The space is modern and rustic with a touch of industrial – from the quartz bar, to the personalized book shelves, and the large modern light fixtures. We want the space to feel inviting and a place that everyone wants to keep coming back.

    My sole complaint is that most of the dishes tended to be salty. While a salt-forward plate is part of an appropriate variety, I found that a certain saltiness characterized most of the dishes. That should be rectified, in my opinion.

    2 waitresses doubling as bartenders plus what looked like only 2 people working in the kitchen made for an extremely slow night of service; 90 minutes in and we had only eaten our appetizers. No apologies for the very slow service or even an explanation, which lead us to believe this is standard for them. The food was otherwise excellent but we won't be back thanks to the service (or lack thereof)

    Valentine's fixed menu was amazing. Optional wine pairing was perfect. Service was impeccable, despite being a little understaffed for the event. Overall this was an amazing restaurant that we plan to include in our dining rotation.

    Carben has surpassed the previous splendid visits we had before the pandemic. They offered an amazing prix fixe menu with wine pairings that were just the right size and left you anticipating the next course. They had 3 folks at front of house who were working fiercely to make this a great evening for everyone. We had seats at the bar and they were lovely to speak with or just watch as they hustled to make everything right. The kitchen succeeded on all counts. Well done!

    We had a lovely evening enjoying the chefs menu. We also had the accompanying flight of wine - great pairings. The dishes were very detailed and full of flavour. The service was great - very knowledgeable staff who did a lovely job explaining all the different components. The last time we were here was pre pandemic and it was just as memorable an evening this time around.

    Our overall experience at Carben was exceptional. After years of walking by this cute little restaurant, we finally decided to give it a try and have no regrets, other than we should have gone and try this little gem years ago. We opted for the chef tasting menu and were wowed! The flavour profiles were amazing, every plate was well balanced, and the overall ambiance was just perfect. From the moment we walked in to the time we left, Carben offered us an amazing experience - staff, food, ambiance and at a very reasonable price!!! This little gem is a must try and definitely a place we will go to time and again.

    We had a lovely evening, the service and atmosphere were nice and cozy, not pretentious. My partner and I had the 6 course Chef's Tasting menu. I tried the wine pairing and everything went very well together. He had a refreshing gin cocktail. We both especially enjoyed the tuna and cornish hen but every dish was fantastic! I'm not usually big on dessert but I was very impressed with the chocolate bundt cake, it was not too sweet and very well balanced. Would definitely go back for another meal!
