CHARCUT is an Italian Roast House run by co-chefs John Jackson and Connie DeSousa, who you might recognize from her appearances on Top Chef Canada, Top Chef All Stars and most recently, as the judge for the Food Network’s Fire Masters. Together, they are two of Canada’s most celebrated chefs. CHARCUT is celebrating its 12th year as the best destination restaurant in Calgary. It is a meat-centric and fresh pasta paradise with a custom-built rotisserie, smoker and char-broiler, featuring amazing cuts of Alberta beef, whole rotisserie chickens and house made bronze-die-cut pastas. Ingredients are sourced from small, local farmers, ranchers and artisan producers, minimising the miles food travels while supporting local.

    Amazing food and our server Michael was fantastic! He had us all laughing and always made sure we had a full glass of wine. Great night with great food. We also took home a roast from the butcher shop which is such a great addition.

    I heard that the Prime Rib Roast Beef Sandwich is a MUST TRY at Charcut for lunch. I was NOT disappointed....it was very very GOOD!!! The roast beef was cooked in house and was just cooked to my liking. The service was also very good! Thank you, Charcut. I will be back for more MEALS!!!

    Love coming to Charcut for lunch with the Lunch All At Once options. I know in order to maximize efficiency, there may be measures in the kitchen to have everything already prepared. It's just a shame when the plate comes out lukewarm at best and takes away from the delicious options the kitchen outs together. Usually, service is also great but I think the server we had may have been quite overwhelmed as we didn't see much of her

    Two out of the three meals were a good size, but their special is always a very small protein portion. Service was great, food was really good, price was fair.

    Food is very mediocre for the price, restaurant is too loud, service was just ok. Really just felt like a noisy bar, charging upscale prices but for average tasting food. Even the menus made it feel cheap, small font which just a bunch of small words. No real idea of what dishes come with. For the main course we paid $140 for the 32oz ribeye and it doesn't come with a choice of side? Just a tiny patch of arugula and bowl of tomatoes and beans... The google description has the word "Steakhouse", however overall I think I would have had a better experience at The Keg for a much better price too. For these prices you are rivalling with fine dining steakhouses e.g Hy's, Chairmans, Modern Steak, but you are definitely not getting that kind of quality of food and service. Definitely would not recommend.

    We had a wonderful evening at Charcut to celebrate Celiac Awareness Day. They offered a special three-course menu for the event. I had a tomato and ricotta salad, Branzino with polenta and fennel, and a chocolate mousse for dessert. Everything was delicious! I also sampled my husbands side dishes. He had ordered asparagus and poutine with the prime rib special. The sides were tasty and we had leftovers to take home due to the generous serving sizes. You could easily share the poutine with four or five people!

    As always, Charcut delivers a wonderful dining experience. The service is outstanding. The food is creative and unique. Be prepared for an intense dining experience. We went for my mothers birthday and we’re delighted.

    Had an excellent business lunch there! We all ordered the different options from the 'Lunch in one go' menu and were all impressed. All options were an excellent price with PLENTY of food, I personally had the Rotissairie option which was Pork that day- my fave! The server was friendly, helpful and, the perfect amount of visits/chattiness with the table. The place was hoppin' for lunch so I'd recommend a reso if you have a time frame. Can't wait to go back!

    DO NOT recommend for breakfast! Online menu is not accurate and cinnamon buns are expensive and sell out. HOWEVER great place for lunch and dinner. Food is always consistent- fresh and very tasty. Great for sharing and family style✔️✔️😋 A must when in Calgary!!!

    Too dark, a little too noisy. The steak was overdone, and the server forgot to bring a steak knife (though easily remedied, of course). The meal was just so-so, and not worth the expense.

    Fantastic food and drink. Server recommendations were on point. Surprised that it wasn't busier for a Thursday night. Only negative thing I would say is that the chair seemed to be quite "well loved" and felt like they were ready to fall apart. Might be time for a bit of a refresh on those.

    First, they ran out of steaks, how do you run out of steaks at a steak house? I ordered poutine, the fries were hard like a rock, the gravy was cold, and the cheese was still chunky, they had added so much peppers to it, wasn’t enjoyable. The steaks took long and when they came out it was cold, it looked disgusting, it was super thin and looked like it was cooked in water, it had a bunch of fat on it, they added a stupid amount of barbecue sauce to cover it, I had a bite and I was super grossed out. You can go to so many better and cheaper places than this place. DON’T RECOMMEND!!

    Very disappointing. We had a large party and everyone found the food really mediocre. The sides were good the Caesar salad was good. The mains were not. Prime rib was quite gristley the tenderloin was served in a very soupy polenta mash. Other mains like the pasta were not particularly good. The dimmers weren’t working so the ambience was not very pleasant. Highly overpriced for the food we got. We wondered if we didn’t get the regular chef as we went on a Tuesday night. Lots of great steakhouses in Calgary. I’m sorry to say that we can’t recommend this place.

    Very enjoyable date night. We shared family style and loved the little gems salad & tuna to start. The steak was cooked perfectly to our liking as well. Expensive, but worth it. Can't wait to come here again!

    Underwhelmed by this visit. Too hot in the restaurant, lighting was really bright. We waited 40mins for a small charcuterie and another 60mins for our entrée Ceasar salad.
