Pour créer le ChoLon Bistro, le chef Lon Symensma a largement puisé son inspiration dans le marché de ChoLon, le plus grand marché aux influences chinoises de Hô-Chi-Minh-Ville. Ce restaurant met en valeur sa passion pour les ingrédients asiatiques et les techniques culinaires françaises dans un espace à la beauté stupéfiante. Le ChoLon sert le dîner et le souper, ainsi qu'un petit menu de collations disponible tout au long de la journée. Le menu se compose notamment de plats asiatiques traditionnels revisités. « La plupart de mes plats s'éloignent légèrement de la cuisine asiatique traditionnelle, explique Symensma. J'adore partager ma vision des saveurs de l'Asie ». Le menu propose plusieurs catégories afin de vous permettre de goûter, seul ou à plusieurs, de nombreuses saveurs différentes au cours de votre repas. Le bar-salon sert des cocktails maison conçus pour sublimer les créations de Symensma. Doté d'un grand écran de projection dans le coin salon, l'endroit est également idéal pour les réunions et les présentations professionnelles.

Uncle is Denver's premier ramen shop. Based on authenticity, but not bound by it, the West Wash Park location is a larger, airy space than the original Highlands shop, with an expanded menu. The pan-Asian menu consists of share plates, sushi, steamed buns, ramen, tsukemen, mazemen and entrees. Craft cocktails, sake, beer and small producer wines round out the offerings for a casual night out. We reserve a portion of our dining room for walk-in guests as well. Chef/Owner, Tommy Lee, has been nominated twice as a James Beard Semi-Finalist.
