Le Shinsei est né de l'envie de créer un endroit qui reflète un certain mode de vie : il arrive à tout le monde de sortir souper avec ses enfants et parfois avec ses amis et maris. L'idée était donc de créer un endroit où une soirée avec les enfants ne signifie pas que les adultes doivent manger une nourriture de qualité médiocre. De la même façon qu'une soirée passée avec les parents n'équivaut pas à passer la soirée dans un endroit oppressant où les enfants doivent étouffer sous le nœud d'une cravatte trop serré. En deux mots, Shinsei est juste un établissement de quartier convivial et charmant pour passer une bonne soirée.
