An "adult" meal. Wonderfully prepared, well presented and it was overall, a great time. I can't recommend it enough.

Don’s Favorite Foods is a prix-fixe restaurant created by husband and wife team Chef Don Salamone and Kate Laurents in partnership with Sommelier Adam Galbraith.
We also offer cocktails courtesy of Jeffrey Morgenthaler and Benjamin "Banjo" Amberg.

Our Italian and French-influenced menu changes monthly and highlights dishes Don grew up with as well as those he mastered though his experiences working at Michelin-starred restaurants all over the country.

From Don: At Don’s, you may find gnocchi like my Ma used to make or Italian sausage modeled after my Godfather’s, Oreste “Ernie” Capone. You might also find scallops still in their shells, Oregon pork in the style of Braciole, and popovers I learned to make from my mother-in-law, Terry, because the Laurents family makes those every Christmas morning... beef tartare, sea urchin, caviar, etc too. These things are all my favorites.

James Beard-nominated, Chef's Prix Fixe Tasting Experience by Executive Chef Jose Camarena, recontextualizes Mexican cuisine and culture through Storytelling.

We exclusively offer a prix fixe tasting menu experience, with 7-Course and a 10-Course options. Both experiences are meant to honor the complex history that created each dish, as well as leave a lasting impact on all those who taste this beautiful food and listen to our stories.

República is a tasting menu-only restaurant.
We offer a 7-course menu at $128 or a 10-course menu at $150 per person.

We kindly require all guests to disclose all dietary restrictions and allergies prior to their reservation. We are unable to accommodate allergies to nightshades, chile, allium, rice . Additionally we are not a gluten free kitchen and are unable to provide nut and seed free diners.

The food was excellent! We loved hearing the stories about each dish and the servers, especially our wine server, were amazing!

The restaurant is small, well decorated, easy to get to, and has a very interesting menu! Our waitress was kind, she knew her menu and portion sizes, was careful to check which dishes should be GF, and attentive. We will go back soon! Great, great food!

Our favorite local restaurant. Warm inviting atmosphere, wonderful art, friendly staff and delicious food! We also love their pasta nights special deal - you can’t find a better value anywhere! And they have Manhattans on tap and really great salads and starters that are all good to share.

Absolutely delicious! Hard to pick a favorite dish, as they were all so superb! The chef Joel Stocks’ mouth watering creations are sublime. Try to save room for dessert too.

All dishes were A, most were A+, several flirted with perfection and the Popcorn ice cream dessert was 100 points! Pairing, NA and reserved wine, were fantastic. Ambiance is top notch in Portland. Service is hands down the best in Portland, in fact, I’d say possibly the best we’ve ever had. The big city Michelins often have a slightly programmed robotic feel, amazing but not always authentic, but literally everyone last night showed sincere stoke about what they do with great answers to every question. An air of subtle pride without pretentiousness. I could go on and on. Absolutely beautiful evening!
