Ernest's Dining Room at NAIT has been aptly described as the "jewel in the crown" of Hokanson Centre for Culinary Arts in the School of Skilled Trades. Ernest's decor is described as "understated elegance". Tasteful compliments of cherry wood and brass highlights, a beautiful rock feature wall, muted lighting and attention to detail provide the room with a distinct corporate ambience. Critically acclaimed and numerous accolades identify the "haute cuisine" prepared by second year Culinary Arts diploma students as "outstanding". OpenTable diners voted Ernest's top 100 in Canada for two consecutive years. Seasoned chef instructors emphasize the importance of using high quality local regional products. Mastery of traditional cookery combined with contemporary artistry has resulted in a truly electric cuisine. Elegant service is provided by eager Culinary and Hospitality students. An emphasis on etiquette and authenticity is encouraged through the guidance of professional mentors.

Going to Ernest's was a wonderful experience for our anniversary. The Prosecco, personalized note, apron and anniversary wishes on our plates for the presentation of our desserts were an incredible treat that made the evening special. From the Host, to Servers, they checked-in throughout the evening, to see if we needed anything and promptly refilled water glasses. It was a wonderful experience and a treat to see NAIT students in action. The food presentation was exquisite and the flavours delighted the palette! Thank you to all involved.

For the most part, it was a great experience. Only things I didn’t enjoy were some of the flavors that they thought would go well together. Things like cauliflower steak with a super dry and cheesy sauce. The whole dish was super dry and wasn’t very flavourful. Steak was great; well cooked and the flavours were complimenting each other. Dessert was outstanding a service was fantastic. Price is pretty normal as far as any fine dining goes.

The menu was quite limited this time. Normally, there are a few more options at Ernest's, perhaps that is because the students are done with their classes already. It was a wonderful experience, and the family that I brought for lunch also really enjoyed their meals. We will definitely be back soon!

Ernest’s is trying to remain open for lunch service by providing a rotating lunch menu. So over the off-season, while they are open, there won’t be buffet. We really enjoyed our lunch. My husband had duck appetizer and pork main course. I had flank steak main course. All 3 dishes were fancy and so tasty. Service was great. I feel the prices were very fair for the quality provided but one cheaper option might be nice. The atmosphere is OK but not as fancy as many other restaurants. Highly recommend and looking forward to next time.

Great lunch. Wonderful appetizers, delicious braised flank steak with au jus, cauliflower purée and cardamon carrots (steak very tender and cooked perfect medium rare). And mango mousse dessert was delicious. Wonderful presentation for each course. Will definitely be back again!

Such a great adventure. The culinary arts students who do all the food prep are proud, excited and enthusiastic about their efforts. And the results show. The servers are also great. It's so interesting to speak with them about their future plans after graduation, and to hear of their current passion for the program.

Had a wonderful anniversary lunch here because they were fully booked for dinner reservations. I actually forgot that I mentioned it was our anniversary so we were surprised to get to our table and find a complimentary card, bottle of prosecco, mini box of handmade chocolates (3) and a free Ernests Chef's Apron! Such a lovely touch and above and beyond what anyone else does these days for special occasions. Our lunch was delicious and we were treated like royalty. My only wish is that we could attend this restaurant year round! These culinary students are top notch! Bravo!
