Le gnocchi congelé n’a pas sa place dans ce restaurant, les pommes de terre sont pelées sur place pour créer du gnocchi frais, léger et moelleux. Les chefs cuisiniers créent de délicieux plats aux saveurs qui ne peuvent provenir que d’une récolte récente. Lorsqu’il n’a pas été possible d’obtenir des ingrédients locaux, les clients en sont informés. Avec cette désignation de la ferme à la table, les chefs sont libres de créer des plats qui s’étendent à différentes cultures et ethnies. Toutefois, la plupart des mets sont influencés par des goûts italiens et américains.
