Welcome to Mosaic! We are situated on the second floor of the Hyatt Regency Vancouver Hotel. Conveniently located across the street from the Burrard Skytrain station. Mosaic features the best buffet breakfast in the city with a live omelette station and a full a la carte breakfast menu. Mosaic is a hot spot for business lunches and is a great place to enjoy dinner before and after the theatre, sporting events and other special occasions. Mosaic Bar overlooks the busy downtown core and is a great place to relax and enjoy signature cocktails, local craft breweries and a wine list featuring both BC and international varietals. Went for lunch with my team from work. We all enjoyed our meals and were pleased with the atmosphere, especially the fact that it was not too noisy and we were able to talk to one another.
Great service and excellent food. The beetroot dumplings were not only beautiful but delicious. Lovely views looking out on Burrard.
Good hotel restaurant. Food is good but not outstanding. My salmon came cooked through and not pink on the inside that's au courant these days. My wife's steak was medium as ordered. If you're a group, order the chocolate cake as it's $30 for the whole cake and $15 for a slice! We got the whole cake and took the rest home.
Simply put, this is an overpriced average restaurant. The service was decent, but nothing special, and the eggs benny was fairly tasty, but the potatoes were lukewarm. Additionally, the $5.00 cup of drip coffee tasted burnt. The overall experience wasn't hideous, but I would never return.
Our server was wonderful! We were a larger lunch group at Mosiac Bar & Grill and all food came out hot and at the same time, couldn't be more impressed. Can't wait to go back and try the pad thai!
We were seated at a table at the window, the wine that I ordered was out of stock, but there was another alternative that was good. We received our food within a few minutes of ordering, and it was delicious. Great food and great service. We will come again.
Salmon tacos were tasty but messy to eat. Chicken avocado sandwich was dry. Big enough for two to split, particularly with the generous side salad included.
Everything was great except for the two mosquitos flying around the table after we were served - the restaurant should take it seriously as this wasn't a pleasant experience from that end. My guests were not very confortable even though food and services at the table were outstandingly positive.
My first online reservation - all went perfectly. Terrific server - didn't interrupt unnecessarily - gave us 3 women plenty of conversation time. Noise level excellent for us to chat - excellent menu choices.

Our office group loves Mosaic for birthday lunches - the special occasion chocolate cake is a definite draw! We also love it that the restaurant is quiet enough that we can actually talk to each other, and that is spacious enough that we don't feel cramped. We also like how light it is, which feels completely appropriate for a lunch time gathering with office colleagues. When the ambience is dark, it can feel oppressive in the day-time. Another plus is the variety on the menu - hearty choices like mac & cheese, to salads, soups and some creative ideas with local seafood. We thoroughly enjoy Mosaic, and would heartily recommend it.
The service and the food were excellent. My guest and I chose the fish option on the menu. I would highly recommend the sablefish. The atmosphere provided a great place for a quiet conversation without constant interruption. If you are visiting Vancouver, this restaurant should be among the places you will eat during your trip.

Great service, they've taken good care of us, the food looks amazing, taste is a bit lacking... not sure why it's lacking in favours, it was mediocre. I really want to like Mosaic more. Might give it another shot some other time.
Laurent made our 1st Wedding Anniversary evening very special. He is a gem. The food presentation was absolutely stunning. The lamb was incredible. Halibut was slightly overcooked, but the flavor was outstanding. Overall, an amazing experience. Thank you!
Understated, exquisite food. Servers are genuine, they love to chat if you invite them. Spacious, nice chairs and sturdy tables. Hidden gem among hotel restaurants.
I love taking clients to Mosaic as it is close to where I work and they have a decent menu, great service and offer comfortable seating.

Had the breakfast buffet. We were a party of 10 including 6 kids. They were able to seat us no problem. Food is really well done but could use more variety. What they did have however was delicious. The omelettes are, hands down, stars of the show here. Have it. You can thank me later. Service was impeccable.

Very nice waitstaff. Good food, nice portions; filling without being stuffed.
That said, the chocolate cake, which is delicious, is enough for 10 people. So, when ordering the whole cake kep that in mind.
Food was cold! Got steak and it was probably frozen but chewy. Also got mac and cheese and like the cheese was hard so it was hard to swallow &&& fish and chips the batter was so bad.
The food and service were wonderful. The only thing that stood out was the plating. Food was served on rough glazed plates and bowls. That wouldn't be bad, except for the fact that you needed to scrape some of the sauce and garnish from the plate onto the food. Fingernails on chalk board feeling isn't conducive to a pleasant experience. They changed the plate quickly, but it would have been better not to have had to deal with it.
Valentine's menu. Food was ok. Foie gras appetizer had very little foie gras (more of a mousse) but tasted good with good rolls. Salmon wasn't the freshest. Lobster was quite good and fresh but too salty. Dessert was sub-par and uninspired. Price was too high for the quality and quantity of food. Everything was nicely plated and presented. Very good service from Annie and decent ambiance.
Good soup and pad thai, and Laurent our waiter was very pleasant and efficient. Only glitch was that we said we had a reservation and I gave my name, and got seated immediately but they didn't check the reservations so had some admin hassle with opentable the next day which was quickly resolved.
Went here for lunch with some recently engaged friends. They were so nice to us and the chef even sent us each a DELICIOUS scallop to celebrate! Wow special service. Will go here again for business or casual lunch - great cake in DT.

Dine Out 2017 - I was able to book a table for 12 with no problem. The servers were friendly. The restaurant always provide a big slice of chocolate cake for people that are celebrating their birthday.
I ordered a burger with a fried egg. It wasn't anything special.
The restaurant was extremely quiet even during Dine Out nights.

It was a disappointment. The place and the food looked/tasted nothing like what it is shown in the pictures. It is your typical hotel lobby food with expensive price tag! There are many other fantastic places in Vancouver.

Excellent "go-to" spot for a business lunch. Great location, great service and a nice feel to the dining area. Food is consistently good and wait times for meals are short.
We attended as it was New Years Eve, it was a set menu. It was plentiful and very tasty.
We were very disappointed. From your email about our upcoming reservation dated December 24th, we were expecting a 'festive 5 course dinner menu' (see bottom of email). The manager agreed that the email was misleading. We were treated to brunch on the house but it was not what we were looking to.
The lunch rush was extra busy due to the holidays. Probably could have had a few more bus people on to manage. Noone came to check on us after the meal was served and it took a while to get the bill. Too bad, this is usually a reliable choice for lunch at any time.
Family dinner with my husband and 3 adult children on a snowy night in December. Service and food was all outstanding. We enjoyed looking out the window at the city streets. Definitely will come back.

Made reservation for Sunday brunch at 10:30. Were not told until seated that the buffet was only open for another half hour. Food was sparse and not replenished at all during that half hour. Hostess was apathetic. Would not go back for weekend brunch.
