We were surprised and disappointed to find that this restaurant is in the middle of the lobby of a busy hotel. It's open plan and feels like a place where a continental breakfast might be served. With entree prices hovering around $50 we expected something a lot more upscale. On the plus side, the food was very good (prime rib & wild boar) and the portions generous. Our waiter was fantastic and added a touch of class to an otherwise pedestrian room. The decor doesn't recommend it as a fine dinning experience but the prices are a little too steep for a casual dinner. Especially since the location is in the heart of a city rich in restaurant choices. You are literally a few steps away from other places offering magnificent high end pampering or delicious cheap & cheerful fare. Not sure what "notch" Notch8 is trying to fill.

I went to Notch8 to get a buffet breakfast rather than using the restaurant at my hotel which had no buffet. I much prefer to have a little bit of everything for breakfast rather than just a plate of fruit or a big basket of bakery goods. The quality and choice at Notch8 was excellent and the staff were very helpful.

Three of my colleagues ordered the feature prawns crab and pink scallop pasta. However neither of them had any crab in their dish.....

Was expecting more from a top shelf restaurant. The food and drinks were on par with fine dining in Vancouver however the layout and ambiance was disjointed and pretty loud. The service was ok at best. The server did not know the difference between elk and bison...two signature meals on their menu. Water was never refilled and it was almost awkward when she did come by the table. More "casual fine dining", not top shelf fine dining.
Notch8 was truly TOP NOTCH. The whole group thoroughly enjoyed!
I purposely chose to make reservations to eat breakfast at 1030 to avoid the 1130 buffet as we like a la cart. The server was lovely but we felt we were forgotten at times. It took over an hour to get our meals. My husband’s eggs benny was luke warm and my daughter in law’s poached eggs were hard. We were on a timeline so didn’t complain.
For a prestigious hotel, I was underwhelmed.

We went for the Father's Day brunch and we were very impressed. There were lots of options for food. Everything we had was excellent. The staff were all wonderful to us and gave us excellent service. We will be back for dinner sometime.
The singer was much too loud. The music too loud. Why does a quite dining experience need to have a cabaret noise level? We could barely talk and we were quite a ways from the band/singer. Food and service was great. Wine price a tad over the norm.
Can’t begin to say how FANTASTIC this restaurant was.
Starting with the knowledgeable waitress to the Elk entree and the Bison entree to the fabulous dessert.
Rated it as the one of the best restaurant you can imagine.
My friend and I enjoyed our food and the service we had from our servers. They were very friendly and made great food and drink suggestions to help us chose what we decided to order. We will sure be back!!

It was my 3rd time visiting your restaurant. I have to say i was very disappointed . I booked for a special occasion for breakfast. We arrived there by 9 am. Unfortunately, by the time we got there; most of the food on the buffet were gone. I asked the servers to refresh the platters but that didn’t happen either! So I had to pick from whatever was left which was not many to choose from...

My friend was visiting from out of town. We are seniors with good memories of lovely family gatherings at the Hotel Van. The waiter was most attentive and made good suggestions. All in all a very pleasant lunch.
Initial waitress pretty much ignored us, but fortunately there was a change in shift and the waiter who took over - Spencer - was excellent and very personable.

Thought it was a regular lunch menu. The website didn’t even talk about a buffet. No indication that the regular lunch menu wasn’t available. Arrived and was told about buffet only... and $59! They finally gave us the option of very limited lounge menu. Only vegetarian option was nachos. Had gluten so I felt very sick for the remainder of the day. Nice staff. Ambience. But poor food experience. Also the music was insanely loud for such a place.
I was hoping that if a special celebration is selected, an e-mail would be sent to notify me that it’s a buffet.

Wonderful restaurant in The Fairmont downtown Vancouver. We had a charming secluded booth near the bar so we could listen to the musician. The food is amazing, service was exceptional. I would highly recommend dning here when you are in Vancouver!
I had a mushroom tart to start, which came in a hard, sweet pie shell. The combination of sweet and savoury was odd, and didn’t suit the dish. The pie crust should have been puff pastry, or a classic rich and delicious pie crust. For the main I had the elk, which was tough and over cooked. The sauce was also too sweet and syrupy. Our server was great!

I often choose Hotel restaurants for entertaing clients because I can make reservations and find a table that is quiet enough to be able to have business discussions - the food is relaiable . In most cases, I have not been let down. That said, in this case, we both left disapponted. The Octopus was much tougher than it should have been, my Club sandwhich had very cold meat and in an overly soaked in butter style grill and less than satisfactory bits of fries ($20). My guest asked for some bread to compliment his meal and he was served a whole loaf (though good) and this combined with a refill on a cranberry soda became a $11 add on. Total bill was $77 (plus tip) which on reconsideration, seems quite excessive - even by hotel standards. Not sure I will return.

It was great but the food is bigger than the plate for dine out. It was a birthday and we told them when we made the reservation and they make a really delicious cake
In addition to the impressive variety and quality of buffet dishes (which most other restaurants that serve Sunday buffet brunch no longer bother to describe creatively beforehand), the creative flair of displays was charming for Easter. Although the service on arrival was a bit awkward and disinterested due possibly to flustered or confused guests who consumed attention, the service was remarkable: not just the pleasant welcoming table service (two different staffers), but also the food display service, in which several different staffers took initiative to welcome us and encourage us to try all of their dishes; in particular, the Eggs Benedict and canape team (two different staffers) were extraordinarily friendly and gracious.
Went for weekend brunch buffet and found a moldy strawberry. And some of other strawberries also didn't look good at all. Reported to the server right away and the restaurant manager finally came (he showed up like 15 mins later after server went to look for him). His response was very casual and seemed he didn't think it was a big deal or something. It was a TERRIBLE, that's all I can say. NEVER GO BACK AGAIN.

Beautiful weekend brunch with excellent service. The waiter was very thoughtful. We were
celebrating our mutual birthdays. We had eaten so much that we had no room for dessert.
Our wonderful waiter packed two boxes of delicious pastries for us to take home.
We very much enjoyed the meal. “Under the forest canopy“ lived up to the promise of its rather fancy name, and the BC pinot noir by Meyer matched it perfectly. A return visit definitely on the cards!
