Had a great time, server was always near by, only issue was how loud the area was due to our group being seated near the live music or the noisey tables near us.
My husband took out family there for my 31st birthday and it was magical!

Given this hotel’s iconic stature the restaurant Notch 8 was a major disappointment. Upon entering the hotel the ambience captivates but quickly dissipates in the restaurant. We have been long time Hotel Vancovuer patrons, celebrating many fantastic stays over Christmas and New Years as well as other staycations. There is some discord with the restaurant staff; not a happy unit and unfortunately it’s apparent to patrons. Hopefully, Notch 8 will improve to complement the hotel’s great history. Thank you!
Sadly, I cannot recommend this restaurant for any reason. In fact, I would discourage anyone from ever going there if they had "fine dining" in mind. To begin with, we would have expected to have at least table cloths covering the plastic top tables. Also, we would have expected to have someone present us with a wine menu within the first 10-15 minutes. (We waited 20 minutes before anyone came by.) Then another 10 minutes before the wine arrived. So by now we have been seated in a rather dreary setting--overlooking a shopping parkade of the hotel--before we were to begin our dining out experience. Then what a sad choice of meals it turned out to be. My wife who is a vegetarian ordered the only plate possible (salad) and made a point of emphasizing that the dressing should be "light" and preferably on the side. She was told that it came "light"; in reality, she was not able to continue beyond half the plate because of an excess amount of dressing. My order of "wild boar" was also a disappointment for too many reasons to list here. Allow me to say that the price far outdid the product! Then, to cap it off, the bill overcharged on the wine, and when I brought it to the waiter's attention, I was told it was simply an in-house "coding error". If so, I would have expected an attentive waiter to catch that error rather than putting me into the embarrassing position of "having to complain" about the bill being too high/wrong. All in all, I can assure you that we will never set foot in that restaurant again and we will make sure it gets known as a place to avoid by our friends who also dine out weekly.
We experienced Notch8 both as a restaurant and as a bar - and the two were rather different experiences. We had previously enjoyed the bar, but this time, our servers mostly ignored us, delivered incredibly weak cocktails, and gave me the wrong wine. By sharp contrast, our server at dinner was attentive, gave excellent reccomendations, and never left us wanting. We would come back based upon our seated dinner.

The food is fantastic. However, there is a sports bar feel in the back of the restaurant that doesn't mix with the fine dining. However, the food! Service was attentive and professionalism was high.

I absolutely love this for Sunday brunch. Have been three times in the last three months. My only concern would be consistency in the food. I have ordered the same breakfast all three times but the third time out it was quite different than the first two times. I did mention it to the waiter but was told that it depended on the chef.

Excellent in all aspects, but for one at-the-end bad note. Despite being one of Vancouver's prime places to dine, the hotel seems to be locked in the past concerning paying bills. No machine drought to the table. The server took my card off somewhere to process my payment. No server should, in 2018, take a client`s card away from the table. This should never happen, for the obvious reason of preventing card skimming. The next time I go there, I`m going to feel obliged to carry a wad of bills. Wake up. Hotel Vancouver, this is a new century! Every coffee shop knows better.
A love.y place to dine while visiting Vancouver. Servers were very accommodating and efficient. Food was delicious and presented nicely.
The grilled cheese and the clubhouse are impressive
No service whatsoever. Had to keep trying to get ahold of a server (we were a table of 5 ladies for a business lunch). However, 3 tables of business lunch for men had server having their meals out to them before we even ordered. Salmon was forgotten on a salad - we never saw it - nor the server no matter how we tried. Food was good, ambience was great but service was terribly lacking. Took me a few tries to get someone over to the table to pay the bill.
The elk dwas very tasty and the service was great. Highly recommend!
Too noisy.The restaurant has hired a disc jockey and the noise level was unsatisfactory.
nobody told us breakfast was closed at 10:30 am and it's not written anywhere either... so we had to rush to get enough food while they were cleaning out right under our plates, not cool

Second time there. First time for lunch. Cauliflower soup was yummy. Garden salad was really delicious, fresh and hardy. Husband had delicious prime rib sandwich from carvery with onion rings. Wish they had discount for valet parking when dining in.
Had a wonderful dinner at Notch 8. Our server was very nice and the food was great. Only hiccup that evening was a very minor mistake with my brother’s order. He ordered a French Onion soup for starters but got a Seasar Salad instead. We didn’t bother to complain because it was minor plus our server was nice. We really enjoyed the elk and the bison. They were perfectly cooked and so tender. It’s a nice place to have a nice quiet dinner. No complaints.

Food was good, environment is top notch. The biggest drawback is the service. The server had no welcoming attitude. No smile, and no attentive service. I almost need to call the hotel front desk to get a server. My wife used to be a Fairmont platinum member. We really upset to see the service level going down quite a bit.
Service was excellent. Sarah, the waitress, was patient with me, as I arrived from a cross continent business trip. I worked and ate a storm while waiting for other colleagues joined. Service was outstanding and the food was great. I had a pasta dish with wild boar and sausage. Odd but wonderful tasting combo. I highly recommend this restuarant.
Wonderful meal at Notch8. The staff were wonderful and very friendly. The food was a bit slow to come out, but the staff were quick to offer us complimentary desserts for the inconvenience. The prime rib was one of the best meals I have ever tasted. Thank you for the great experience.

Very nice restaurant but food is not as good for its price. One is too salty and one is too plain.
We were surprised and disappointed to find that this restaurant is in the middle of the lobby of a busy hotel. It's open plan and feels like a place where a continental breakfast might be served. With entree prices hovering around $50 we expected something a lot more upscale. On the plus side, the food was very good (prime rib & wild boar) and the portions generous. Our waiter was fantastic and added a touch of class to an otherwise pedestrian room. The decor doesn't recommend it as a fine dinning experience but the prices are a little too steep for a casual dinner. Especially since the location is in the heart of a city rich in restaurant choices. You are literally a few steps away from other places offering magnificent high end pampering or delicious cheap & cheerful fare. Not sure what "notch" Notch8 is trying to fill.
