It's a gorgeous dining room and calm relaxing environment. My only complaint is that they don't have a very good happy hour beer selection. All that have is Labatt Blue and Bud Light. I wouldn't have expected this from such a great restaurant. Seriously they need to think their happy hour beer selections to draw in a larger happy hour crowd.
We were at Notch8 on Oct.17th for a birthday. Our waiter. Christian was anazing - all four of us agreed. For anyone cekebrating a special occassion and looking for lovely ambience, delicious food and wonderful service, you should give Notch8 a try. Tell them Mike sent you!
I love the understated elegance and quiet ambience. But I was not impressed by the food nor service.
The food was very ordinary.
We ordered: Salmon Avocado Toast, Notch8 Potatoes, (Kids) Grilled Cheese with Fries, and Beef Ribs.
Overall, it was a lackluster experience.
Nice ambient, mediocre food, mediocre latte, good service.
Very accommodating, friendly wait staff. Food and wine selection were very good and the food was delicious. Really enjoyed the live music. My one small quibble; all these otherwise top notch (and expensive!) Restaurants seem compelled to have a big screen TV playing sports. Canada, eh?

We had a semi private booth seating. Service from Jacqueline was excellent and welcoming. We will be back.
We had a fantastic night with very delicious food and friendly environment . I highly recommend this place to everyone who appreciates high quality foods.
Notch 8 is much larger than it first appears. We walked through two rooms of diners, were led down some steps and were seated at a cozy table for two in the "library". It was quieter than the main parts of the restaurant which was fine for us as we like to chat during dinner.
Our waitress, Duchess, was very friendly and helpful. The food was quite good. My wife enjoyed her risotto and I had the Notch 8 version of steak frites (pan steak) which was one of the best that I've ever had.
Highly recommend this restaurant for the food, attentive service and ambiance.

Turkey dinner was very dry. Server didn’t do quality checks and lacked attentiveness. Overall felt like a number, not a person. However, the ambience was lovely and bar cocktails looked good.
We ate two meals at Notch 8. We expected more ambiance from the Fairmont based on our many past experiences at several Fairmont locations. The setting was far from elegant. The Thanksgiving dinner was mediocre at best.
Inattentive to orders (two mistakes for a party of two), avoid pastries (small and dry), just okay food otherwise. Staff okay, but not particularly friendly. They miscommunicated when brunch was for the long weekend. Make sure you ask about what (breakfast vs. Brunch) is actually offered and at what time, because it seems subject to change without notice.
Sophisticated elegance for the masses
Not a large selection of choices, the roast was too rare, the pumpkin creme brule was runny, the egg Benny English muffin was too hard.
The service, ambience and food were all excellent. However, they only have one bathroom for the entire restaurant which is extremely inconvenient. The restaurant seats 50+ people at a time. Poorly designed and a poor decision to think one bathroom would suffice for an entire restaurant. I’m not sure how that’s up to code. When dining here just be ready to wait in an extremely long line for the bathroom.
Also, the cleaning lady was cleaning the bathroom during the brunch buffet which was another decision that was poorly thought out.
We had the Thanksgiving brunch buffet. The food was outstanding, especially the prime rib. There are also lots of selections for dessert.
People is very courteous and keep their distance when getting the food.
Expecting Hotel Vancouver but got the Keg.

The food was excellent; very good flavors. Despite our server seeming less than enthusiastic, not very personable or attentive, we appreciated Lorena taking the time to check in with us on our experience and introducing us to Executive Sous Chef Dennis.

The prime rib was great however the chicken entree was dry and the French onion soup wasn’t great. For the prices one would expect better.

As part of the Rocky Mountaineer package we had a limited menu. Was disappointing that 2 of the choices were not available and we were dining fairly early at 6:30 pm
I took a friend for a belated 21st birthday celebration for the Prime Rib set dinner -it did not disappoint, as she said it was the best prime rib she’d ever had. She also enjoyed the French onion soup and chocolate cake. For myself, I wanted the whole roasted trout but they did not have it, so I went with the roasted ling cod, which was very good. The gem lettuce salad was good and the raspberry sorbet on the pavlova was excellent.
A wonderful evening from start to finish. Service was attentive and the food was very good. A great atmosphere within the restaurant ensured a memorable reunion with our son and his partner.
Unfortunately for an upscale restaurant, they failed to achieve in service and quality. We ordered breakfast which should be easy enough. The food was cold and eggs were underdone. The toast was burnt and still cold. Service was mediocre as the waiting staff preferred to yell things from a distance vs. Coming by the table.
Overall I feel like this could have been an off day however this doesn’t change the experience. This restaurant certainly has the potential but seems to lack quality control in the kitchen as well as the house.
Ambiance is nice as should be expected for a restaurant at a fairmont hotel. I just wish the food/service met the same standard.

The Notch 8 Gem Lettuce Salad was a joke . It was outrageously expensive for a few lettuce leaves . You needed a magnifying glass to see the cheddar . Certainly no taste of cheddar as there was so little of it . Ashed Brioche crumble?.? What was that? Ground up burnt toasted brioche from breakfast ….really? No taste whatsoever . What is the point ?
The Flat Iron steak was flavourful but wasn’t hot
The OMG chocolate cake was excellent as was the special birthday dessert .
The wine prices are outrageous
