Very much enjoyed the experience. Went for date night with my girlfriend and the service was excellent. Food was very good. Definitely recommend the chocolate cake. Ambiance was really nice. Almost had a hotel in Las Vegas vibe.

My partner and I celebrated her 24th birthday here. Myself personally, I have been to Notch8 before. Both times were absolutely fantastic. Service was perfect, the food was outstanding. We had Bison Carpaccio to start, it was light and had great flavour.
For entrées, we both had the Steelhead Salmon. Everything about it was delicious - from the little details like the crispy leek and black garlic emulsion, to the crispy skin and flakiness of the Salmon; it looked amazing! Will definitely be coming back again.

Waitress was very friendly but entered part of our order incorrectly so we never got our sides even though we called it to her attention. Food was good but not excellent as I would expect in an establishment such as this. Our complimentary coffees were served in a carafe and were not very hot.

The meal was delicious. However, the dessert that came included with the meal was amost inedible. It was called Frosty and consisted of 2 dried out cream puffs stacked on top of each other to resemble a snowman. Unfortunately it didn't taste as good as it looked cute.

I’m surprised that I didn’t find this amazing restaurant before.
We were warmly greeted and accompanied to the table. The atmosphere is very nice and we enjoyed the live musician.

The food was great too! I had a Fraser valley chicken breast and it was great.

Overall this restaurant is very underrated and the prices are pretty reasonable for the service, location and food.

I’m absolutely visiting again.

Never again!!!
Do yourself a big favour and enjoy the many wonderful restaurants in Vancouver but not this one. Guests who are staying at the hotel should look for other restaurants. Had breakfast at this restaurant on a very chilly morning. The restaurant was freezing with cold air wafting through the dining area. Food was horrendously overpriced. Ordered kids breakfast with pancakes. Three tired looking pancakes arrived on a plate with nothing else. No garnish. Nothing. My avocado toast was $25 and came with one piece of bread with some smeared guacamole and a poached egg on the plate with nothing else. Nothing! Such poor presentation for such a huge price. There are so many great cafés that do a better job for half the price. I’m not sure how the restaurant can get away with charging such prices. Probably because you happen to be sitting in the Fairmont? Not worth it.

Our food was excellent. I ordered a celeriac and pear salad followed by a cod served with gnocchi and roasted squash and my spouse ordered a prime rib. The restaurant was a little cool because of heating issues but we dressed appropriately. Overall, it was a great dining experience given Covid and all the issues surrounding this. We were spaced a great distance from other tables so it felt like a personal dining experience. The service was attentive and polite without being too intrusive. A great anniversary dinner.

We had a beautiful Boxing day breakfast on our holiday weekend in Vancouver. The Fairmont is gorgeous and Notch 8 restaurant, located inside, was decorated with such taste and ambience for the holiday season. We enjoyed our breakfast and our service was incredible. My only tiny suggestion is serving the croissants pastries on the tower tower breakfast, warm rather than cold. It would just kick it up a notch, so to speak!

Our food was superb and plentiful. Ambience was fitting and beautiful as we sat by the fireplace. We really enjoyed the live music, his choice of songs was fantastic! Most of all our table service was unbelievable…. attentive, warm, friendly, personable, lovely personality overall. My apologies for forgetting her name?

Months in advance I booked for the Christmas day buffet. It was cancelled and they did not inform me. When I arrived, they were switching from lunch to afternoon menu. It was a scramble to get turkey on Dec 25. Then when the turkey arrived, it was great food but if I waited even 2 minutes, it would be room temperature. All in all, I was happy to not cook but not happy that the buffet was cancelled with no notice. At the very least, they should have phoned me or emailed me. Also, they should serve hotter food especially for Christmas day turkey. Eating warm food on Christmas day is no fun even in spite of how tasty the turkey and trimmings were.

Hotel Vancouver holds treasured memories for my family over many decades. Although our server was outstanding and the food and drinks were very good, we found the ambience only ok and noise level uncomfortable. Times change as do trends, we know. The old Hotel Vancouver’s charm has given way to sports on big screens and loud music.

Well over priced for the very small portions and overall experience. Nothing stood out as being poor. Nothing stood out as being great either. I had the trout for $37. It was half a fillet of a very small fish. It was garnished with about 7 chickpeas and some greens. The fish tasted fine. The light fixtures were the highlight of the meal. I wouldn't go back.
