   The entire team at 1888 was wonderful. They helped make a special event - my engagement - feel celebrated collectively as each person individually congratulated us. They even got photos without us asking! The food was the best in Banff and made to our dietary needs. Our server, Nick, knew exactly what would be safe for us to eat without needing to check with the chef - who also congratulated us personally. This is a cannot miss experience!

   This was our first visit. Although he entrance area was not very inviting, the dining room was quite comfortable. We enjoyed our steak dinners. Everything was well prepared and tasty. Undoubtedly the best feature of this restaurant was the superb service displayed by our waiter Adam. His knowledge and attentiveness elevated a very good meal to a fine dining experience.    Our waiter was very professional & knowledgeable. We had the waygu and Gnudi as the mains and for sides the mushrooms & max & cheese. Desert we had the sundae and it did not disappoint. 10/10

   The service from the beginning to end was amazing. The food, displayed beautifully, but unfortunately was just okay. I don’t believe it was worth what I paid. The scallop and pork appetizer was really good. I got the wagyu strip and it was very tough. Unfortunate being a $100+ steak. My girlfriend got the bison loin and that was pretty good. The sides we got were very good. Overall, I would recommend. Just be mindful on what you order.

    We came to Banff last year and had dinner here our first night. We ended up coming a second time during a 3 day stay solely because of our experience with Adam. He is the most amazing server we have EVER had. What felt like going above and beyond was just a regular shift for Adam. We couldn’t come to Banff without stopping by 1888 for the amazing menu and service from Adam.

    Excellent service. The food was superb! My first bite was a baby carrot and it was delicious. Beef cheeks amazingly tender. Steak was outstanding with the whipped mashed potatoes.

    We were a party of two and shared the 14oz striploin with sides. The food was good but did not blow us away. We shared all our items--pork belly and scallops, both salads, steak came sliced with au jus, and 3 sides. The staff were pleasant and efficient in clearing and preparing for each course. The cabbage kale salad was extremely over salted. The steak did not have as much flavour as I would have expected. The cushion on the banquette side of the 2-seat table was not very supportive. We had to switch sides so that my guest had a firm seat. They did offer a cushion for us when we were seated - take the cushion if asked. The service is very good. I really enjoyed the wines by the glass. We did enjoy ourselves and would recommend to others.

    Absolutely surreal dining experience. The food was amazing, the service absolutely top tier. It is obviously a more expensive place to dine however I promise it’s worth every penny. It’s difficult going back to any other dining experience afterwards be forewarned. I know dining here will be all my special occasion wishes I can only hope I get to return again!

    Had the Striploin Wagyu and it was amazing. It was cooked to perfection and every bite melted in my mouth. We ordered the mushrooms, Brussels sprouts, and whipped potatoes plus a side of peppercorn gravy. Everything we put in our mouth was top quality. Highly recommend, especially on a special occasion.

    The service was excellent from every staff member! The filet mignon (Alberta beef and Waygu) were cooked exactly to what was requested! The Bread and butter and Brioche with Foie gras was an excellent appetizer to start off with. One of the best dinners I had in my life!

    The service was fantastic but the food/wine is way overpriced for what it is. The NY strip steak was as tough as shoe leather but the filet was good. $120 for a $20 bottle of Decoy is a little aggressive. Our server was great.

    We were in the Banff for a weekend getaway and came to the chop house for dinner as an experience to dine at the castle. Overall it was a lovely experience. The only thing I could even complain about was the presentation of the filet minion. It was just a hunk of meat on a plate. No garnish, or au jus drizzle or anything. Would have made it more appealing. Was delicious none the less, but I found that surprising in a more upscale restaurant. Only room for improvement chop house.

    Ambience and venue were spectacular. Service was excellent. Surprisingly my wagyu strip loin steaskvwas tough. My 5 companions had delicious steaks. I would recommend 1888, bit not the striploin.

    We had the 35 oz ribeye and an 8 oz fillet and both were cooked to perfection!! Little pricey but what do you expect for the Fairmont hotel. It was totally worth it and delicious!
