Blue Hat Bistro at Pacific Institute of Culinary Arts
On the first Friday of every month, our popular market fresh and seasonal West Coast Buffet takes place - $33 Lunch; $44 Dinner. Reservations for the buffet are recommended and can be made up to one month in advance.
We were new and old friend gathering. We each ended up ordering the three course dinners and ordered different dishes. All were beautifully prepared and photo worthy. I highly recommend the Blue Hat Bistro. Both fine and affordable dining in a lovely setting by the boats.
Great meal and great service. With the exception of the once-a-month buffet we once tried, every meal has been excellent

The food and service was great. Our only disappointment was with the dessert. I wanted to try their cheese cake but they ran out. Everything that we try on the dessert table was way too sweet. My 9yrs old loves sugar and she couldn't even eat it.
We enjoyed our evening, but were very surprised to find that our only choice was a buffet. Nowhere (Open Table or Blue Hat Bistro website) did we see that the only food available that Friday night was a buffet. The food selection was good and the dishes ranged from average to excellent. The service was very attentive and the location was nice. However, we would have selected a different restaurant had we known it was a buffet only.
Delicious! Lovely view and ambiance for celebrating. Best short rib ever. Can’t beat the value for $$$.
There were two in our party. Unfortunately the server was the only person on the floor. He had to turn reservations away. He was spread far too thin to give good service. He kept a positive attitude but overall a disappointing evening. Had the fish & chips...fish good but the chips and cabbage salad was not enjoyable. I have been on several occasions during week nights and had excellent experiences. Will not return on a weekend again.
I’ve eaten at Blue Hat before, and was impressed with both the food and the service.
This time was different.
The Maître D was rude and impatient, even though the restaurant was mostly empty.
My meal - ricotta ravioli- was very salty.
The presentation was quite exceptional.
I was quite surprised when we tried to eat at the restaurant last week. We came without a reservation, and even though the restaurant was empty, we were turned away.
I’m happy to experiment with new food ideas, prepared by students.
I’m wondering if the management is really a help or a hinder...

A good effort by student chefs but still on a learning curve. Wonderful presentations of dishes but kitchen/server controls brings out cold food and some delays re timing of courses. Would go back though. Half our bill was reduced for the above mistakes. Good customer service.
Depending on the group of students, some dinners are excellent.
Food and environment both good but could be better. Dated back years ago, it's of better value. Buffet got more selections and exciting dishes.
The service was very sporadic.
It was slow. The drinks came late.

Service is not always predictible. Food was good on Friday but burgers on Saturday were on a dry side.
Lunch-time visit, and I chose all the 'student's creations' from the menu. They were all well up to restaurant standard, and interesting. Service was effective, if perhaps a bit timid (but this is a training restaurant). A great place for an interesting meal. I have no criticism (it was my fault that I had expected the roasted plum to be hot, but it wasn't - delicious anyway). Thank you.

Unfortunately the meat in each entrée (pork chop & short rib) were tough. The short rib serv ing was not warm but was graciously replaced with a hot one. Cheesecake was cloyingly over sweet. Appetizers were okay.
My impression was the kitchen was stretched as they were catering to a very large and noisy party at the same time. Some food was excellent, others plates not so much. Chocolate gets 10 stars, it was superb.
Everything from the time we arrived till the time we left was superb. Food and service was 5 star. This restaurant is one of many good reasons to return to Vancouver often.
I went to this restaurant with my family on last year’s Canada Day and the food was so good!! The pasta, meat was so good even the dessert and starter too so I decided to go there on September 12 2019 to celebrate my birthday!! It turned out that their starter was ok but the pasta was the spicy and the sauce for the pasta wasn’t good, it was just the sauce from the clam which was white wine sauce and the ribs meat wasn’t good at all. The dessert I ordered, the pavlova doesn’t even tasted like pavlova and there was even tomato in it, so weird!! The other desert, the cheese cake was too sweet and the ice cream was so so. Overall the food wasn’t good and i find the price for it isn’t worth it at all. Not coming back again anymore!!

I made reservations for lunch with a friend on her birthday. It was a wonderful experience. The view was great, food excellent and so creatively presented.

We went early 6 pm on a Thursday night for dinner - sat by window great service and food selection and quality - will go again!!
The main fish dish was cooked to perfection. I had sable fish and my friend had ling cod.
The desert was different and delicious. The salad was good but a bit too much endives- the dressing was very good. Earl Grey tea superb!!!!
We thought this was going to be student cooked and run. Unfortunately it was not. The food was well prepared but the service was a disaster. Maybe they need to take a page from the CIA and their restaurantd

Our dining experience from beginning to end was wonderful. The service was friendly, prompt and included details on the entrees. Blue Hat is a GEM.
Fantastic experience! The food, the service, and the atmosphere was exceptional. Great variety of options on the menu for everyone. Had friends visiting from Toronto and we are so thankful that we chose this restaurant.
The ambiance was that of a high-cost restaurant yet the prices were refreshingly affordable. We went as a group, permitting us to sample all the delicacies on offer and were not disappointed. I'd be hard pressed to say wether I was more impressed with the presentation of the dishes (amazingly artistic), the taste (some of the flavour blends were fantastic!) or the creative combinations served to us (tea-duck, squid ink potatoes, melon mousse to name a few). While there was a long wait time between dishes (we'd opted for the three course taster menu) this only added to the experience, letting us linger and enjoy our meal to its fullest.
The steak was delicious -cooked to perfection.
2 minor critiques: the salad that accompanied the steak was over-salted.
my daughter and I split the "main" Zucchini salad as a starter which was perfect. This dish doesn't have any protein in it so as a vegetarian "main" it wouldn't be that filling. perhaps serve with some lentils or chickpeas to provide protein if you keep this as a main dish.
Such pleasant surprise at lunch. Everything way better than we expected. We already pre booked two more occasions right away !

The food was very good for a school. The service could have been better. It was inconsistent.
Appreciate this is a training center, rating was adjusted accordingly, more forgiving than I would be for a regular restaurant. My reservation was for 12:15 we had to wait for over an hour to be seated, they offered a complimentary glass of wine for the inconvenience, thank you. Everyone tried their best to make our experience positive. Good value for the price point, portion sizes are perfect for 3 courses, each course arrived promptly.
My appetizer tea smoked duck was excellent, the main dish was ling cod and it was cooked to perfection where it lost me was the day's dessert creation--horrible! An innocent cookie that had a meringue with sage and rosemary, topped with crispy sage (to me these are more savoury than sweet herbs). I like that the chefs- in-training want to create something new, but this dessert was a bad idea.
More attention needed to the tables, the knife wasn't polished and a folded paper napkin under the table leg is never appealing. This review is meant to be helpful, my best wishes for a successful career in the hospitality industry.
