Helmed by Botanist Executive Chef Hector Laguna, the menu represents the abundant botany of British Columbia and the Pacific Northwest, where ingredients sourced from their natural landscape are coupled with contemporary techniques; designed to showcase the best version of themselves.
Located in the heart of Coal Harbour inside Fairmont Pacific Rim, the inviting space offers four distinct areas with their own robust personalities; a bar, garden, dining room and lounge – all inspired by the principals of botany.

The food was extraordinary along with the cocktail experience!
We had a great time at Botanist for my birthday dinner with my family. The reason for the 4 and not 5 star review is that I thought the appetizers were quite lackluster. The entrees however are a completely different story. The lamb, duck and chicken entrees were all AMAZING. Cooking in a way that I didn't know was possible. We were seated in a garden suite, which is a semi-private room with lots of greenery on the roof, window sills and just around the room in general. Really quite a nice room! Will definitely come back, but will probably just skip the appetizers and save room for dessert (which was also great).
Service - friendly and professional, however felt a bit impersonal. Ambience - clean and bright floral decor, comfortable seating and very nice lounge, however lighting in the main dining area lacked the warmth felt in the lounge - could have used candles and softer lighting to set a better mood for diners. Food - presentation was beautiful and innovative, and the flavors complex, however the hominy in the lamb main did not work- too hard and crunchy and just way too much of it. Skin on duck breast was divine, crisp and subtly smoky. Despite some minor hiccups, overall one of our favourite new dining experiences. Will be back.
Botanist was perfect for our special birthday dinner. It is such a pretty restaurant with a calm ambience, the food and drinks came out so quickly and the staff were lovely. We were even given a signed birthday card from all the staff ! Thank you!
Food was alright.
Service is not as good
Never even came to add more water just basically take your order and take your bill
18% tips is the first choice even you don’t feel they deserve that
We had a great experience. Our server was amazing and the food was first class.
Amazing food and great atmosphere. My wife and I loved the minimalist design/decor and the nature influence can be seen in all their dishes and cocktails.
The service was also great and we were greeted with a card wishing us a happy anniversary.
Overall, I would highly recommend Botanist, especially for any kind of celebration. The menu isn't cheap but it's in line with other high end restaurants. Even more so, the portions were a good size and we left feeling fully sated.
it’s now my fav restaurant everything was amazing just trust me
Just love the new menu! We have dined and enjoyed Oru in the past, but the new rebranding of the restaurant just blew us away. Loved the lamb, crab salad, sturgeon and the bison tongue. The Meyer Lemon desert was amazing. Lovely cocktails as well. We shall return!
A wonderful botanical experience! The perfect date night for those looking to spend a bit. A great brunch gathering for friends.
For dinner, 20-Day Dry Aged Duck is a stellar entree and the Bison Tongue alongside the Watercress Salad are two incredible appetizers for splitting amongst you and your company.
For cocktails we had the What The Flower. A sweet, fruity and flowery drink that's more flower than fruit. I myself had the Treebeard. A nice woodsy, pine flavoured gin drink for the Cascadian male.
I had heard many wonderful things about this place prior to my visit, and all expectations were met. Highly recommend
Taste was great .. we had the tasting menu and aside from the desert and the beat salad every thing else kinda looked the same ...in the Same bowl plated the dame way.. for 120$ kinda expected a lil more wow factor there as that is the most expensive tasting menu I know of in the city right now... flavours were excellent it just left us wanting a bit more..
Wonderful décor, wonderful food, wonderful service! Thoroughly enjoyed our Valentines Day Lunch here.
I went to Botanist with clients, and met in the lobby bar for cocktails prior to dinner. It was a bit loud, but the entertainment and ambiance was perfect. A bit of fun - the lobby was adorned with a display of vintage Haute Couture designs. (on display for only a limited time) Dinner was a delightful mix flavors - the Foie Gras served on a waffle with bacon syrup was interesting, and the mushroom tagliatelle was flavorful. I had the sablefish, which was rich and buttery, cooked perfectly. Loved the drink menu, and chose "poetry in motion" With the tag line, "Dance like nobody's watching", I had to try it. That and i like anything with vodka and elderflower - add in grape, lemon, rhubarb and it was light and refreshing. Will go back there again, perhaps after a spa day at the Fairmont!
Outstanding experience. From the service to the food to the ambience. We will definitely be back for work and pleasure.
Such a special place to celebrate our engagement ❤️
Amazing! Great food! Great service!
Amazing meal and cocktails
The Botanist is a great restaurant for a group outing or an night out with friends. The cocktails are the real gems! They definitely have some cool mixologist crafting up some amazing and unique creations. The food was excellent and tasty, however, the portions weren't large. I went for breakfast and would have enjoyed a little bit of a bigger menu selection.
Lovely and gorgeous place for brunch! Enjoyed our time while at the botanist and will for sure return.
Must visit place for brunch to gather up for lovely time. Food was very good and interior was super!^^
Great place for a date, beautiful hotel, decor, and great cocktails
A great addition to the fine dining experience in Vancouver. Food was great, flavourful and unique. Would go back
I was very happy with my main dish which was the lamb. My son got the lobster which was chewy... it’s a relaxed ambiance, a little too diner style for such an upscale and expensive restaurant. Doesn’t give you the feeling of being on a special occasion. The service was excellent and the bread was amazing :)
It was our 7th years anniversary dinner that day.
They first greeted us with an anniversary message card which was very thoughtful and sweet.
Maybe it was a busy night, our server barely come to our table after ordering our food , appetizer was fast, about 10mins to the table, it tasted good. After cleared up the appetizer plates, Then we waited 20mins for the main course, we ordered lamb and steak. Lamb was very good, but the steak was super hard to chew. Since the server was too busy, he never come to our table and ask how the food tasted, so we didn't even bother to complain the steak and left the food on the plate .
The service was impeccable. The food was unbelievable. We would good back again. I think I might just next week
They are very attentive and accommodate for allergies.
Was at Botanist celebrating our anniversary. The staff’s service was flawless and our meal just amazing! Definitely recommend this place.
Everything was amazing. The vibe of the room, the food, service. It was truly an amazing evening from start to finish.
Amazing!! This is probably my fourth time here and always great. The only downside is when I get the special cocktails I can drink it only at the bar which is slightly disappointing.
Seriously good service. Food cooked to perfection. Did the "We'll take it from here" chef tasting mention. Highly recommended.
A lovely place for brunch! Absolutely gorgeous decor and very relaxed environment with an upscale feel. Food was delicious too.
Best meal I’ve ever had. A fabulous experience that was worth the price- and I rarely feel that way about expensive dinners.
Excellent wine and cocktail selection and beautifully crafted plates
Enjoyed our meal. Loved the room with plants that we sat in.
We always eat here when visiting. Great food and architecture of the space is so appealing and comfortable. Thought the live music was too loud and distracting last time.
Had the tasting menu, some great and inventive things I otherwise wouldn’t have ordered but turned out to be a great experience. Some of the best waitstaff we’ve ever had; attentive, knowledgeable, friendly and professional.
We went later in the evening so the noise level was quite low, I could see how it would get loud during peak hours.
Cocktails were interesting and nothing that really messed with the palette and enjoyment of dinner.
I always liked the restaurant but the menu hasn’t changed, time to change the menu, I won’t go back.
Botanist never fails to impress. Food is impeccable, and staff are great (very helpful and courteous and ever-present, but not invasive.)
Hello representative from Botanist,
I was not aware of the break between 10:30-11:30am. However, the system allowed me to book a ten o’clock slot.
Upon arrival, none of the staff informed me that Botanist will be closing in 30 min. Had I known, I would not allow my guest to sit through this awkward meal wondering why we seemed so unwelcome here.
Our waiter performed a minimal service. And if he had kindly remind us that the restaurant was closed. My guest and I would have left and gone to Giovane cafe to continue our conversation. Should I apologize that I stayed passed 11:15 am.
On the other hand, the food and ambiance were amazing. But the waitstaff should definitely improve their communication skills with the patrons; as there was no language barriers on the patron’s side.
Thank you for reading my feedback, I hope you had a better day than I did.
It was so loud that it was impossible to carry on any conversation. Not a restaurant for couples or if you wanted to talk to your guests. However the food was very good.
Always good, a cool room, strong service and well executed food!
