Our food took a very long time. Some orders forgot to go through and my eggs where undercooked (whites where still clear) and I got hard boiled and asked for scrambled Server didn’t seem to care or be apologetic but still waived it from my bill. One girls food was served cold (Mine was served cold too but was too scared to tell server cause he was kinda rude about all our orders having issues) and waited 20 min just for ketchup. Server seemed annoyed I accidentally called him Andrew instead of Alex. Over all extremely slow service I was there from 11AM-1:45 and just for my tea took 15 min. Expect to be there for a good few hours. For the price it is, i definitely expect better food and service

We were celebrating our Anniversary, an impromptu date. The service was excellent and attentive. My main plate was served with a story of the oceans and their decline - every item on the plate told the story. That was a first experience for me. Most importantly the meal was perfectly prepared, delicious and lovely to look at. We will happily come back again.

Service and ambience are outstanding. Food was somewhat less than we expected given the prices. Our salad was a rather bland collection of lettuce and not much more. Lobster was small and very expensive. Chicken was delicious but too filling. Steak and seafood dishes otherwise nice. But overall the experience was good.

My table agreed: the cunard, the lobster, and the sirloin were all incredible and each had unique touches we had not experienced elsewhere. My favourite was the ricotta with the sirloin; truly a flavour combination and texture that was completely new and unexpected—along with delicious.

The proteins on each dish were very high quality and the presentation beautiful, unfortunately, the flavours were at best bland and uninspired. The service was friendly but inattentive. The dinning room is very loud and hard to have a conversation. The desert, raspberry/chocolate was AMAZING! and the highlight of the evening. Will not be returning.

Second floor in the Pac Rim hotel, there have been some nice restaurants in this space. This a beautiful room, as in previous iterations. Service is elegant and friendly at the same time, as always. But I think this is the best restaurant that has ever been in this space. The menu is the reason. Every dish I saw was multi-layered, colorful and beautifully presented. The lamb shank was no exception, beautiful and intensely flavorful. So tender, I don't know how they got it from the pan to the plate in one piece. A great experience.

It was an interesting experience. I had been there 2 years ago, and the service and food was impeccable. However, this time, it wasn't as high of a standard. This was unfortunate since I was entertaining a work colleague from overseas and he specifically requested this restaurant. First, the hostess had put my sweater over my jacket when she took it, and inevitably, it was fell to the bottom of the cupboard for the rest of the night (making it dusty). Second, we were put at a table in the Garden area - that seemed very bizarre - it looked like a canteen rather than a 5 star dining establishment. Third, our servers did not enunciate their words very well, so half the time, we didn't catch the description of the dishes and had to get him/her to repeat it. However, on the positive side, the sommelier for the night was just so amazing (as she was 2 years ago), and the food was great as well - no complaints there.

Everything from the beginning to the end was amazing. The cocktails were some of the best we've had anywhere. The dinner was amazing and I had some of the best Foie Gras in their Duo pairing. Would definitely recommend to anyone looking for a great date night or special occasion restaurant.

I really liked it. I absolutely loved the decor and ambiance. The food was tasty and all rich in flavour and the service was great. I even received a handwritten card from the staff/team for my birthday!

Enjoyed the environment as well as the experience! The foie gras was delicious, however, the non-savoury, sweet pie was not as good as the savoury foie gras paired with the churro! The dessert was ok, I wish there was more chai ice cream that came with the poached apple dessert, the dessert didn’t blend as well as I had imagined in my head. Overall, really enjoyed the meal, the duck and chicken breast was delicious and I’ve never enjoyed mushrooms as much as I did at Botanist!

An incredible experience! Everything was perfect. From our greeting at the desk to when we left - service was incredible. Nice to see that everyone helps out and makes sure all our desires are met without even asking. Truly truly impressed! Love the cedar / alder birch sap drink and the carrot beet ginger lemon drink! The king salmon dissolved in our mouths, the baratta was delicious, the calvetti pasta with the pine nuts and then the double chocolate raspberry sherbet was a perfect ending! We will be back to experience more!

The Botanist was an outstanding restaurant and dining experience. Located on the second floor at the Fairmont Pacific Rim hotel, it was a beautiful open floor plan where you can watch the Executive chef prepare your meal. Despite to open concept, noise levels were minimal

The menu featured fresh, local ingredients on the Pacific Northwest masterfully prepared with beautiful plating and presentations. There were so many great choices on the menu, I couldn’t decide what to order. We ended up starting with handmade tagliatelle with wild mushrooms and shaved black truffles, and beautifully prepared tripe with celeriac foam. For dinner, we ordered aged duck breast with wild mushrooms and local vegetables, and seared beef strip loin with king oyster mushrooms and ricotta gnudi. Everything was great.

They had an extensive wine list with wines from around the world, highlighting sustainable organic or biodynamic wineries. The selection of wines by the glass were chosen to pair with one or more of the dishes.

A great experience and I will definitely be going again.

This is a birthday dinner. They start to say happy birthday with a all staff signed birthday card to greet us. Really impressive . Our waiter Chris is very nice and friendly. Definitely will come back and recommend to our friend .

The degustation menu worked very well with wine pairings especially by the talented sommelier Stephanie. She recommended some very lovely Canadian wines. Stephanie is a wonderful storyteller that keeps one spellbound. The ever so talented chef had pushed the boundaries of using local produce in a playful and delightful manner. It was simply divine in terms of taste. And Larry, bless him, was so genuine in sharing his experiences. We were lucky to meet Vikram, from our hometown, which brought a warm cozy feeling of home. Truly amazing.

The duck main that I had was amazing. I’ll go back for the duck. Service was excellent. The chicory salad was nothing special and had way too much dressing. The gin cocktail I had was very good. Overall an excellent experience. Thank you!

We went for breakfast. Seated promptly at our table. We were quickly asked for our beverage orders (coffee, earl grey tea), both served quickly and in large carafes, which was nice. We ordered the smashed avocado toast with a side of crispy potatoes and the steel-cut oats. The avocado toast was good, particularly the sourdough bread, which was quite flavoursome. The potatoes were underwhelming and had only been warmed up, so were more soft throughout than crispy. The oats were largely disappointing -- served with a nice chantilly cream and some other toppings, however, in such a small amount that the oats quickly became a bland-tasting exercise in chewing. The overall decor and ambiance of the restaurant was nice, if lacking in a cohesive theme. Our general experience was good, but we were disappointed as our expectations for this restaurant were higher. We would not recommend this place to others looking for an exceptional breakfast experience in the city.
