    This is the 1st time to this restaurant. Not sure what the hype is about. The ambience is nice, service, well, honest opinion from international travels, at high end places and local eateries...well its ok. It wasnt bad, but i honestly cant rave about it. Ive been to alot of restaurants around the globe (all cuisines), and well lets just say, I am not fond to come back. The food was ok. Its not extraordinary nor was it really good but then it wasnt bad. Do I crave it, or want to rave about it to friends and family to come back, indifferent and honest opinion. Some minor mix up with bills at end, instead of fixing it up, it be good to not just say I dont know how the system works and do nothing. If I was working at Botanist, i would make efforts to fix it. No matter how nice or casual setting, service should be always be delivered with excellence. That's how I would manage my food stand, food truck, casual cafe, 5 star restaurant and or Michelin star restaurant. I know because, there has been restaurants where I am genuinely excited and eager to share to others to come back and or look forward to coming back. Drinks are diluted but beautiful.

    Started our experience at the bar for a few pre-dinner cocktails. The Bartender Jeff was fun, personable, and shared cool mixology knowledge with us. For dinner I has asked for a chef table if possible, even thought there wasn't one, they seated us at a corner booth with a clear awesome view of the kitchen that was perfect. The Sommelier Matthew took the time to learn our preferences for pairing for the meal and took us on a wonderful wine adventure. He had such an enthusiastic nature when talking about wine that got you just as excited. Our waiter Chris, paced the tasting menu perfectly, was easy to talk to and even joked with us. From start to finish we had an amazing experience with top notch food, wine, and presentation! The dessert was one of my favorite Ive ever had

    I must admit the decor &amp; the staples paper menu was a bit off putting at first. But the service, food &amp; drink made that all a non issue!! Devine is how I would describe our dining experience. Meant believe I waited so long but glad I finally did!!

    The food is marvelous n the service was good until the dessert came . I have send a note to the restaurant that I have requested a small dessert with written word of “ happy birthday to Alan “. When I arrived the hotel at the restaurant. I have confirmed with the host at the front. She said they will take care of it. They are aware of the writing. But when the dessert arrived. That was no writing on the plate and I was disappointed as everything went so well until the end. I have ask our server. She just replied. “ WE don’t do any writing “. In a Very rude manner. It just changed the whole mood setting n feel very unpleasant. I mentioned to her that the host at the front was aware n will have it done. I think it is quiet unprofessional the way of handling it at the end. just ignore n walk away thinking it is ok. We don’t just have our special occasion in any restaurant. I would not recommend this place for any special occasion for anyone.

    The food was fabulous in presentation, taste and smell. We did the tasting menu and it was a pleasant surprise. Each plate was explained to us as to what was in it. They all looked gorgeous. The sommelier also presented to us the pairing wines that went along with the tasting menu. Ambience was lovely. The decor and the live music was a bonus. All the staff was working as a team. Chef Hector did an amazing job. One of the best dinners I had from beginning to end.

    The Botanist, located close to the waterfront within the Fairmont Pacific Rim Hotel, effectively operates as a discrete restaurant. "Fine dining" is perhaps sometimes overused, but this establishment is an exemplar. My partner (for whom this was a much pandemic-delayed treat) opened with the burrata salad, including some exquisite smoked carrots that she was kind enough to let me sample. My scallops starter was perfectly cooked and the treatment of the accompanying radishes was very clever and well presented. The lamb rack and lamb belly duo was much appreciated by my companion, and my dish of halibut was so beautifully cooked, light and fluffy that it must have been caught very recently indeed. We rounded off with two luscious desserts, namely, the Warm Rhubarb Tart and the Valrhona Chocolate Cake. A glass of a nicely-structured Okanagan Pinot Noir, Tantalus, proved the perfect accompaniment. It remains a mystery to me that a city with the cultural and culinary diversity of Vancouver still can't boast a Michelin-starred restaurant. Our friendly and knowledgeable server, Chris, told us, however, that the Botanist is determined to make a strong push in that direction. On this showing, it really ought only to be a question of time.

    My partner and I are both vegan and don’t drink and we were happy to find many options in both respects. The food was fresh and interesting with many locals ingredients. The ambience in the restaurant was classy and cool. Our server (Chris) was lovely and helpful! Would love to dine here again.

Menu to be downloaded very small letters and low contrast on a phone screen ( and no I don't need glasses) 4. Sommelier didn't tell us about the local wines 5.     The tasting menu was fantastic. The wine pairing was well matched with each course and the Sommelier was down to earth yet really knowledgeable. Our waitress Lindsey was wonderful and very attentive to our needs. The congratulations card for our daughter who recently graduated was a really nice touch and keepsake with the courses we ate on this very special, celebratory occasion. Thank you to everyone at Botanist for a memorable dining experience.

    The maitake mushrooms with sun chokes was so good. Scallops were good &amp; the salmon was good but overpriced in my opinion. Cocktails were unique and quality. Nice ambiance

    Staff very attentive. Sommelier was entertaining and determined to find us the perfect wine. Food was well presented and delicious. Tables were well spaced out and did not feel confined. Well lit, live piano was delightful.

    This place is absolutely top notch! We had the tasting menu with wine pairings. We have done this at three Michelin starred restaurants in the last few years and this blew them all out of the water. Every dish was exceptional and a few were GOAT. Really great food and service was top flight and perfectly timed. Mathew the Sommelier generates great insight and entertainment on each pairing, and does it quickly, which is art. Go...now...just go. And do the tasting menu (also a shockingly good value).

    Absolutely fantastic. From drinks to dessert, everything was incredible. Our server was attentive and knowledgeable. Would suggest getting there a little early to find parking and the restaurant. It's tucked in the second floor of the Fairmont and was a tad difficult for us to find. Extremely enjoyable dinner experience.

    I ordered the duck and my husband got the steak, both were overdone and my duck was fairly chewy. Service could have been more attentive so we could have brought our issues to the attention of staff earlier in our meal. However, flavours were good, and the drinks we enjoyed were also excellent.

    Amazing food as always. I’ve been many times and will continue to go but this time service just wasn’t there. Server disappeared multiple tomes, never really came back but to give us our dishes and the time between dishes was also too long (like 30-40 mins). My companion even noted that tables that came after us were getting their drinks and dishes served before us. Overall, good and worth it. Just wish the service was a bit more there.
