Superb blending of flavors and textures made an amazing meal. Staff is friendly, well informed and generally lovely. They were very accommodating to diverse food needs and allergies without compromising the integrity of the meal as a whole. Beautiful presentation backed up by excellent taste. Don't hesitate, go!

Food was beautifully presented, flavor was alright, tartare was very simple... no complexity. The salmon was quite fishy, didn't finish it. Was expecting more of a wow factor in taste at this price point. Better places to eat at $150pp.
Most of the cocktails were delicious and fairly priced, Treebeard was mellow, was expecting a more woodsy smell. Favorite was the Meadowland Tonic and Poetry in Motion.
Overall experience was good, would come back for drinks but not for food.
Fiancé and I had the tasting menu on Christmas Eve. The food was fantastic, food service impeccable, and wine service was unmatched. Highly recommend this place for any special occasion (I think we left spending $600+ USD for 2 people). Ask Matthew (somm) about the wines of BC - there were several amazing Canadian wines we don’t hear about in the States. Thank you, Team Botanist, for a memorable Christmas Eve experience.
Christmas dinner set 6-course dinner was spectacular! Appreciate that the chef was receptive to accommodating our request for one vegan menu along side the holiday set menu. Every course that we had was thoughtful in terms of tastes, textures and the presentation of each dish was a work of art. The service was very welcoming and friendly and not at all stuffy. We found the decor a bit cold and not at all festive however they did have a piano player which was lovely. Overall a very enjoyable experience.

Wife’s birthday celebration.
Did not enjoy the cocktail (I found it not even drinkable and I will drink most), the Pinot Noir offering by the glass tasted nothing like a proper Pinot Noir, and only enjoyed one of several food dishes.
Also, for a place called The Botanist, we expected far more colour in the interior, plants, table centrepiece. In fact the entire place was drab - cream and green, that's it, it was too brightly lit, and the music too pronounced. Where are the flowers or flowering plants? At minimum I would have liked to see some cut flowers on the table.
Prices are high and considering our enjoyment of the food, this was of very poor value. I have no desire to come back and try again at these prices because of the food. Each dish felt overdone, as if the creators tried to make something different, but the changes made little sense. We came to have an experience, awaken the palette, to try something new. We left wondering why each choice was made. The food felt try-hard and not cohesive. Though it was elegantly presented and looked aesthetically pleasing. But taste is the most important, and unfortunately that we did not enjoy.

Nothing was impressive.
We found the food inventive but often overly complex; several of the dishes seemed muddled in flavour. Beautifully presented, of course, but not all the food was hot when served; the service, though knowledgable, was somewhat stilted, overly earnest (this was of course, only one server, but we found the hostess less than cordial). Wait staff were sometimes unavailable when, to bring wine, clear plates, etc., and we had to call them over. It's a beautiful room but also a bit generic 'global high-end hotel brand'. All in all quite disappointed, esp give the enormous hype and the cost. Perhaps the newly introduced Covid screening requirements affected staff and the kitchen. Cocktails I should say were very good and beautifully presented,

One of the best restaurants I’ve ever been to. We went for my husbands 31st birthday last night and our server was impeccable! The food was delicious and the drinks were so tasty! Beautiful place, very well done!! Would highly recommend this place to anyone looking to go out for a nice dinner.
Everything about our dining experience at Botanist was exceptional. Ambiance, service, food and wine were all equally delightful. We opted for the tasting menu with wine pairings and were not disappointed. A special shoutout to the risotto and Wagu beef courses that were out of this world. Fabulous evening start to finish.

Overall the food was very good. Both my partner and I enjoyed our mains and starters and they were able to modify a few dishes to be gluten free for my partner who has celiac. The potatoes we ordered as a side dish were only so so but the dessert was lovely.
Friday night live piano was right at the optimal listening level and featured jazz and holiday favorites. The tasting menu and accompanying wine flight was delicious and paired well. Perfect evening.

We had mentioned in our reservation that we were there celebrating our anniversary and every single person we met congratulated us! Brandon was our server who delivered impeccable service.
We had a flight to catch otherwise we would have tried the Chef's tasting menu. We started with Pan Seared Scallops and the Vegan Carrot Salad - both were very good and presented artisically. The portions were perfect - not too much, not too little.
For our mains, we had the lamb chops and belly and the duck - both were delicious and portion sizes were once again, perfect. We had a little bit of space left to share the poached apple dessert.
Everything was top notch; we'd definitely come back again, especially to try the brunch menu!
Really memorable experience for our Christmas staff dinner in the private dining. I can see this becoming a fixed annual event. The service was impeccable and genuine which was refreshing and made it a very enjoyable evening. The tasting menu was impressive with thoughtfully put together. Flavours were unique and presentation came together well. Thank you for a wonderful dinner and social experience to end our year on such a lovely note.

Not up to Fairmont standards. Especially as a celebration restaurant and with the prices you would expect better service. Disappointed and would not go back. Maybe they are understaffed. At a restaurant when you at paying$64 per person for brunch - the service to match it.
Weekend brunch was simple, delicious, and worth returning again in the future. Food alone was great but adding in drinks really made the value worth the visit.

I had brunch with my friend on the weekend at Botanist which inside Fairmont downtown hotel close to Canada Place. We tried the $68 brunch which had 3 course with drinks and that was good. The taste and portion of the food was exceed my expectation. The service and atmosphere are good too. This place is definitely worth to try.
Absolutely phenomenal! My two friends and I have been wanting to eat at Botanist for some time. We finally did so last night and we definitely weren’t disappointed.
The service by Matt was first rate and his recommendations were spot on. We were surprised at the end of the meal to find that it was his first solo service.
We had four appetizers and two main courses between the three of us. The duck breast main and the roasted squash salad were particularly flavourful but all were delicious. We will be looking to return asap.
Service was thoughtful and kind. From the server to the receptionist picking up reservations. It was excellent. Food was kind of disappointing.
