Contemporary Canadian
Botanist celebrates harmony with nature, in an environment that is as rich and diverse as the terroir it represents. The experience reflects a new Pacific Northwest, one that has always been here, just waiting to be discovered.

Helmed by Botanist Executive Chef Hector Laguna, the menu represents the abundant botany of British Columbia and the Pacific Northwest, where ingredients sourced from their natural landscape are coupled with contemporary techniques; designed to showcase the best version of themselves, making people go to the gathering place for our culinary community.

Located in the heart of Coal Harbour inside Fairmont Pacific Rim, this casual fine dining restaurant offers four distinct areas with their own robust personalities; a bar, garden, dining room and lounge – all inspired by the principals of botany.

I heard so many good things about this place from so many people my expectations were high. The food was not terrible but mediocre at best. Considering the cost you could say I was very disappointed. My partner ordered the steak and I ordered the vegan beet steak we were both equally disappointed.I appreciate the complementary bottle of sparkling water and bread from Fife bakery was great but otherwise not impressed at all!

The team at the Botanist knows what it’s doing. We had the tasting menu with wine pairing, created in the moment by the chef according to what we wanted. The result was stupendous. Everything worked well, from the house made burrata (!) to the maitake dish. Wine pairings were inspired, especially the Pinot with the mushrooms. Highly recommended for those who love modern food.

Daughter spent her 16th bday having a brunch with her friends. Waiter forgot friends order which came late. Girls order a non alcoholic mimosa (w/ sparkling water) it was just water down orange juice. Girls felt rushed. Maybe it was an off day for Botanist. My husband & I go often to Botanist and usually have a good experience.

This restaurant offers some of the best craft cocktails I've tasted. Rye N' Reynolds is definitely a fave, smooth, balanced, complex. I was last here two years ago before the pandemic. When Canada opened the border to Americans and I scheduled a trip to Vancouver this was the first place to be booked. The meal was excellent (muscovy duck breast, perfectly prepared) and gai lan. Service was spot on, warm, professional and friendly but not intrusive. Carry on, Botanist, you've nailed it.

This restaurant surpassed my expectations. The food was just as I had hoped for: innovative and of high quality. We both began with the octopus starter. Apparently it is one of the most popular dishes on the menu and it was easy to understand why. This dish was great and we can now join those who rave about it. For our mains I had sable fish while my wife had lamb. Both were very flavourful, well plated and made it from the kitchen to our table quickly.

The two wonderful surprises were the wines - and the delightful lady sommelier - as well as our server who was equally delightful.

Two suggestions that need to be followed up on. First, lighting at the table. Abysmal. We had to use our cellphones to provide light where and when we needed it. A small battery operated table lamp might work wonders. Secondly, table coverings. There weren't any. Yes, I know table linens are a big cost item, but common! This is supposed to be fine dining, not some fast food outlet.

Bottom line, Botanist was an excellent overall experience and we hope to return.

Tagliatelle was the most flavourful pasta I’ve had in a long time. So good. Charred octopus was also delicious. Duo of lamb was fantastic and so was the rib eye. Didn’t care for the side of gai lan or the “ratatouille” but everything else was absolutely wonderful.

Botanist was able to cater to the dietary restrictions of a vegan and a pregnant lady with allergies. We were truly impressed by how they were able to accommodate our dietary restrictions even with their Chef’s tasting menu. The wait staff were friendly and attentive. I highly recommend coming by for dinner!

Waited over 1/2 hour for a reserved table and it was early the service. No one came around to communicate this. The "atrium" has no ambiance and overall an underwhelming experience. I wanted a quiet table but not a lesser experience than what the dining room offers. Servers were friendly, food was ok to good but again, underwhelming compared to other restaurants in their field. Huge fan of the Fairmont hotels but this experience left me not feeling I need to return any time soon to Pacific Rim.

food quality was really not worth of the space nor the price we paid. we had tasting at $117 per person with not even the quality of some of the street food. Maybe it is is inside Fairmont Hotel? maybe the rent is too high? risotto is too salty and lamb is not the best cut and came hard to chew. knife also was poorly chosen for the food and does not cut into the meat even. poor experience for the food despite a nice ambiance and location. Wine pairing also a joke - for $60, did not even feel that i had wine at all. Pour was too small, probably at 2 oz. each for 5 and that is only 10 oz. of wine. almost order another glass to go with the meat course. overall rating for the food/wine at below average.

Husband and I decided to celebrate our anniversary…(we haven’t ate at a restaurant since before COVID)

Overall, service and food felt great until we saw a mouse and pointed it out to the server (which they also saw and said they would handle).

But obviously mouse was gone by the time she went to look for it and we were left scared for the rest of the night…Anniversary dinner ruined…

Arrival, departure, and everything in between can only be described as perfection. Thank you to the staff for a truly memorable experience. Botanist captures an energy so special, you just want to bottle it and save it for later. Try the duck, and whatever wonderful wine the sommelier Stephanie recommends!

The Sommelier was first class. Knowledgeable and passionate about her art, was the 5 star act of the show. Everything else was third class minus. The wrong appetisers served at the behest of an arrogant chef and then lamb then served raw was only the start of it. All style over substance and an absolute fail.

Watching the chef and his kitchen at work was such an amazing experience. It’s honestly an art and was an honour to watch. However, the service was very pretentious and left a bad taste in our mouths. We were visiting from out of town and botanist was #1 on our list of restaurants to visit. When our server came around it felt like he instantly profiled us as a young couple and that we maybe weren’t worth his time. It’s really too bad that happened but the ambience is amazing and we highly recommend sitting close to the kitchen to gain a better appreciation of the time and effort that goes into each plate.
