Everything was great, one thing, I had to order 3 times for sparkling wine/champagne as your list was out of the ones I ordered. So you may want to update list with available wines. Your sommelier was apologetic & we worked thru it.

1. Foie Gras with Waffle
- waffle was cooked with too much butter, tastes crispy but too greasy
- Foir Gras itself was very smooth, perfect with seared apple

2. Aged Beef
- way too dry on the surface, especially the portion on the two sides
- the green sauce had a very earthy flavour
- disappointed dish

3. Duck Breast
- very juicy and tender
- crispy skin, nicely done
- the serve poured the sauce on top of the charred corn, which was already seasoned, and made the corn extra salty (too salty I couldn’t finish the last bit)
- recommended!

4. Pineapple Dessert
- interesting combination of different textures
- not so sweet if you eat everything together, crunchy and light taste
- recommended!

For all the hype of this restaurant it just didn’t live up to expectations.

They market themselves as having amazing in house made bread and when you arrive you get one serving of the same type of bread with no variety or gesture if you would like more.

The other item which was a bit odd was there is no daily fresh sheet or specials. Just what’s on the menu which to me speaks a little to a lack of creativity in the kitchen.

Appetizers-> one thing I will say is the portion sizes are good for a high end restaurant where you get more than just a couple of bites. We had the pasta and gazpacho which were good although the pasta was slightly dry

Main course -> very nice where we had the lobster risotto and duck breast. I was surprised that you only got two slices of duck with the main dish since most restaurants will give you closer to a full breast.

Service was just ok where we had to wait a considerable amount of time once we were finished our meal to get our cheque.

All in all the experience was just flat and with the number of great restaurants in town I wouldn’t rush back.

Great meal at Botanist. We opted for the chef’s choice menu. They were conscious of food allergies and preferences, taking them into account for the “off menu” choice. Timing of dishes was superb. I chose to do the wine pairings as well, the sommelier was great. She was very young but very passionate about what she does and offered so much information about each selection. Each dish was so wonderful, but particularly the fish dishes. Beautiful presentation and careful consideration of flavors and textures. My only complaint is that the sheers were closed covering the windows, wish they’d been open to continue appreciating the lovely day outside.

A bit disappointed to the main dishes, though the bison tongue and the scallops taste amazing.
Service was great, as well as the ambience. Will definitely try it another time.
Btw, cocktails are fantastic as well~

Since I moved to Vancouver 2 years ago, the Botanist is my favorite restaurant... the food is cooked to perfection (special thanks to the Chef), beautiful presentation and incredible service! Every dinner I had at Botanist was outstanding and I would recommend for special occasions, business or everyday dining. It is not expensive compared to the experience and quality of the food, ambiance and service you will get.

We came in with a friend who is usual out of town for work and we try to dine in any new restaurant or somewhere she hasn’t been. We were celebrating 2 birthdays and an engagement and wanted to go somewhere nice. We’ve never had their tasting menu and decided to give it a try. We were pleasantly surprised every course was very thoughtful and delicious we felt it was worth the price. Highlight was the foie gras waffle and pasta dish. Wine pairings with each course was very complementary, bright and we took note to order then next time. It was nice to try things we wouldn’t have normally ordered which made it a fun and pleasurable meal.

The food presentation is creative, the cocktail I selected (What the Flower) was wonderful, and the service was attentive and unpretentious. I would come back for the ambiance, the location, and convenient option of walking down to the lounge of the hotel for live music and a different scene. My husband and I were satiated from our 2 courses each and did not have dessert. We both found the flavors were not terribly exciting in either of our meals. The colors and presentation of my butter poached lobster was promising but left me a bit disappointed with the first bite as I found the food a bit bland. The texture and taste of the waffle beneath my foie gras appetizer made me think of a defrosted, store-bought ones I used to eat as a student.

The Botanist inhabits a cool, smart and contemporary space in the Fairmont Pacific Rim hotel. We had a wild mushroom tagliatelle (lovely fresh,thin pasta) and delicious scallops to start with. Main courses: seared salmon with celeriac and poached halibut in olive oil with hearts of palm. Did have to return the halibut as it was almost cold but a new one was supplied.

Great cocktail bar, attentive and knowledgable table service, interesting menu and diverse wine list. Sadly arrived too late for the tasting menu but the duck and lobster entrees were outstanding. The restaurant was full and VERY noisy with large, loud tables around the two of us, which was a bit unfortunate - definitely didn’t make for a romantic date night! - but didn’t detract from food or service.

Great food and loved the flavors. Poached lobster and sable fish were perfect and the tagliatelle had the best flavor!! Wait time for our food was a bit too long unfortunately but our servers were very friendly.

Original server Jen was amazing, after switching to another table in the garden room, our server was not observant, not friendly, hardly ever came to our table to check on us and did not go above and beyond to make my birthday dinner special.

I could write a review just on the depth of flavor in the cocktails, which really are world class, but the food stole the show. Awesome local/seasonal ingredients (lots of amazing mushrooms on our selection) , fantastic preparation and presentation. Truly amazing meal - for sure a favorite.

We had dinner for my boyfriends birthday. The restaurant surprised us with a birthday card for my boyfriend which was lovely.
Our server was lovely and had great recommendations, but it was clear that she had too many tables. Many of the tables around us were trying to flag her down and there were long periods of time when she did not come to our table.
The food and cocktails were excellent, but poorly timed. Our appetizer came to the table before the cocktails we had ordered almost right away. We also had bread provided to the table before our cocktails.

Breakfast on a weekday, not staying at the Fairmont Pacific Rim where the restaurant resides. Very gracious staff at the front desk. Excellent 'Botanist Benedict' and Avocado Toast plates, perfect perfect poached eggs. Also a fresh fruit bowl contained extraordinarily fresh, ripe, sweet berries and melons. Good coffee, too.

Excellent ambiance and incredible food. The waiter was helpful, yet not intrusive. Drinks were deliciously well-balanced. I thoroughly enjoyed the duck while my friend raved about the lobster. The restaurant was very lively on a Saturday night. I highly recommend and will definitely return to Botanist!

We had the tasting menu. Other than the first course (salmon) was totally disappointing, the other courses were good. The highlight is the lamb saddle which was really delicious. The atmosphere is lively and energetic. Wine pairing was fine. The sommelier lady is so sweet, always with big smile. We enjoyed the evening. Thank you.

It was good to have a lunch with friends. The manager who serves us was very helpful and kind as we were rush in time. My friends need to have a short lunch. As the manager's care our lunch delivered us in short time without lost its quality.
I was happy and enjoyed the lunch.
