Helmed by Botanist Executive Chef Hector Laguna, the menu represents the abundant botany of British Columbia and the Pacific Northwest, where ingredients sourced from their natural landscape are coupled with contemporary techniques; designed to showcase the best version of themselves.

Located in the heart of Coal Harbour inside Fairmont Pacific Rim, the inviting space offers four distinct areas with their own robust personalities; a bar, garden, dining room and lounge – all inspired by the principals of botany.

Everything was great from the food to the service. We sat at the bar and our bartender (I believe his name was Jeff) was a treat and super amazing.

The restaurant was beautifully intertwined between 3 seating sections. Open concept kitchen where you could watch meals being prepared before your eyes. Outstanding cocktails..so clean and fresh tasting. Menu was easy to navigate and every bite was well layed out sending your senses on an adventure. The housemade bread you could eat all day.The cost was more high end but worth it. From service to decor it was nothing short of perfection.

The only problem with this place was that it was the first place we ate and now nothing else tastes good. The food was outstanding both from a taste and visual perspective. Highly recommend.

Young, vibrant and hip restaurant with well prepared food. Service was a little on the slow side. Have experienced more “wow” tasting moments at comparable restaurants. Overall, a very good experience. Bread could be improved by souring a little more.

Thank you all for making my friend and me feel so welcome. And thanks to Jackie for looking after us so well. We enjoyed our delicious brunch (crab benedict and French toast). Told all my friends to go to The Botanist while in Vancouver. Hope to be back!

Service was excellent, from fulfilling our request for a private window seat for Anniversary, to dealing with all our extra questions and other requests, plus a very friendly staff, all of them (even if not the waitress of our table)... and even going above and beyond with giving us a Happy Anniversary card, with all of their signatures!

The food was beautifully presented, with wonderful and unique combinations of food groups, tastes, fragrances, textures...

We both each ordered appetizers, entrees, desserts, wines and cocktails... Our favourites were the Sunchoke Soup, Butter Poached Lobster, Meyer Lemon Cake, and What The Flower cocktail. Very good indeed! Would come back for more... and we did, with the Fougasse Bread to go... oh, that butter was mouth watering...

The only one complaint was that the Rib Eye, while ordered Medium Rare, when it came, the top slice was medium rare, but the slices behind were slightly more medium well done than medium rare... That was a bit of let down...

However, all else was wonderful and beyond! Yes, we would definitely love to come back and try all the other choices on their menu!

Dining at Botanist was a treat. The selection of wines was unique and spectacular and the presentation was artistic and the food fantastic. The Botanist bread baked in-house was so delicious, we bought a few loaves to take home with us. Really a special experience.

We had the tasting menu and it was very good and filling. Out of the 6 dishes, half were considered excellent and the other half were very good. The only major complaint I had was although it was good service, it was a bit slow.

Truly exceptional, from the creative dishes, the flawless execution, picture-worthy presentation and delicious flavors, to the friendly, thoughtful and informative service. The sunchoke soup, the mushroom tagliatelle, the poached lobster, the sablefish, the Meyer lemon cake and the almond dacquoise were all amazing. Not just a display of impressive culinary technique; the food tastes fabulous! Craft cocktails were also great; we tried the Poetry in Motion and the B&T. They also make great use of locally-sourced ingredients. In short, a stand-out performance all around. Our waitress was super friendly and helpful, and the sommelier also deserves special mention for her help in sorting through the options for dessert (wines about which I know little). Unlike many other restos I’ve seen at this “level”, not at all a pretentious experience, just down-to-earth and friendly.

We went to the Botanist for our anniversary. What an absolute treat from beginning to end. We had the tasting menu with wine pairings. They came at a good pace and we were there for about 2.5 hours.
The food and wine were exceptional. We eat all around the world and the Botanist was better than some Michelin star restaurants.
This is a restaurant with a divine original menu with knowledgable staff to support it.
Next time we’re in Vancouver we will definitely book again.

Simply put, one of the best meals we've ever had. Fantastic food inventively prepared, wonderful service that was warm without being intrusive, and a refreshingly original approach to designing the space. Highly recommended.

This is our second visit to this restaurant and both times it was outstanding. The staff are friendly and professional. The food is quite simply out of this world! It is visually impressive when it arrives and that is just the start of the journey. It is not inexpensive, but not ridiculous either. Good value for the experience, service, and food quality. Extensive and non-pretentious wine list with many very good wines available by the glass. The extra touches such as gorgeous napkins and monogrammed ice are fun. Well done Botanist!

Service was reaaaaally slow. Friendly but at one point the kitchen forgot about our order for the second course. The server apologized about this but still the complete tasting menu took us like 3 hours. I was full by the second hour. Also, we were there celebrating a friend's birthday that is visiting the country and instead of giving us a birthday treat we got a birthday card signed by the staff. Which I though was a little strange. Can't the place afford to give our a little bday cupcake or at least ask the pianist to sing a happy birthday version? Its not like this is a cheap eats spot. Overall, food is always strong and they were really accommodating so we had no complaints there but service was lacking in that sense for us.

The carrot salad was amazing, as was the chicken entree. I would also definitely recommend the lab cocktails, Deep Cove was wonderful and I can't wait to try the others.
I would take a pass on the watercress grape salad, it was drenched in dressing.
I hope they add a chocolate dessert to the menu soon!!

Food and service was v good, we loved the details. Jackie or server was extremely attentive n professional.

The menu seemed v similar when we dined in Dec 2018. Could not remember if we ate there also on Wed then, if there is no daily rotation, it is menu fatigue for us.

We eat out at what I consider "high end" restaurants fairly often. This meal at Botanist beat all others, hands down. From the incredibly creative cocktails to appetizers to entrée...all ingenious, well plated and delicious.
