   Incredible dining experience. Our server Emily was a delight. She was extremely knowledgeable of the menu and was able to offer great recommendations. She was attentive without being intrusive. The food was fantastic. The portions were quite large for the price, so definitely worth it. Highly recommend.

   The 43$ mushroom pasta & 40$ gnocchi was really disappointing. Both sauces were blah. Caesar salad was OK barely any dressing. Would try one of the other restaurants at the Fairmont.

    This restaurant is a must if in Banff. The service was excellent. We had lobster pasta which was delicious and the tiramisu was to die for. The menu is varied and an excellent wine list. We had a lovely evening which rounded off our amazing time in Banff.

    We had a lovely evening at Castello Italian last night. As locals from Canmore we appreciate having such fine dining so close to enjoy. The food & service was excellent ! Our server of 30 years at The Banff Springs was a real veteran and took Especially the Bone In Veal Parmesan. The Calamari was outstanding. And the Lobster Carbonara was very tasty. Cocktails, Italian “Peroni” & the Wine were perfect ! See you soon !

    There was a little confusion at first…if you select Bar seating, this is actually not in the restaurant, instead you’ll be sat at the Ramsey Bar next door. This ended up being a blessing in disguise as the server/bartender Max offered superb service and really seemed to enjoy his job. Great food, and great drinks as well.

    The food, as always, was amazing. Service and wine recommendations from Jodi were spot on, and the pairing was great. This is our favourite dinner place in Banff and ideal for an anniversary celebration, where you just absolutely need everything to be perfect.

    This was a wonderful experience for our whole family, which included grade school age children. We had the lobster carbonara which was amazing, the creamy polenta, gnocchi and meatballs also were standouts, although really the whole meal was one of the best Italian meals I have had! The staff was all so so nice and attentive, taking special care to make sure the children were also enjoying the meal and the restaurant. The ambiance/decor was lovely, kind of a relaxed elegance feel that was special without being too stuffy. Overall, highly recommend!

    Wonderful ambiance and very good food. A bit spartan on the presentation. Ordered the sable fish and got a filet of fish and three cherry tomatoes. No starch or other vegetables included. For the price of the dish, this seemed lacking. Otherwise, we had great service. I have been to the restaurant before and there were more pasta options previously. Also, not sure why they charge for bread when their entrees are $50+ each.

    Loved the staff and ambience. Food was disappointing for the price. Veal parmigiana was a big piece but a bit dried out. Lobster carbonara was not enough to fill up my husband. Caesar salad was ok even though the lettuce was extremely fresh. Eating at the hotel was on my bucket list and I’m disappointed.

    Amazing service, amazing food, amazing atmosphere... Popped by for dinner (by myself) last night, and overall just an amazing experience. The food was better than I was expecting, and the service was outstanding, being friendly, helpful, and setting the "Fairmont" feel. Definitely recommend this restaurant!

    Hi! Two Blackfoots from Alberta shout-out. For my 30th birthday celebration I decided to go to Castello Italiana and it was a very lovely experience overall. A sweet memory for my life and I. My partner and I come from the beef and potato side of Alberta, and it’s our first experience at a higher end restaurant and we loved it. As Indigenous people we didn’t feel anything but welcome, warmth, professionalism, and a beautiful experience from the staff. The space is intimate, it feels like a dinner party rather than a restaurant, but there’s enough space for privacy between tables. I received a free desert and a candle for my birthday which was a fun surprise and was really cool of them to do. I’m not a big dessert person but I appreciated the craft that went into making their mousse and it was an enjoyable experience to eat it as a celebration. It had hazelnuts and cherrys as the staring ingredients, I give it A+. The Burrata and pickled mushrooms were incredible, and the Caesar salad was stunning. Our entrees were delicious but not quite our tastes, we wanted to experiment and get out of our comfort zone haha. But the other tables around us had incredible looking plates. I got the lobster carbonara but I think I’d try the Sablefish next time. Really beautiful and romantic night :).

    I would love to say a special thank you to our server David. We dined at Castello twice during our stay at the Fairmont and we had the pleasure of his service on both occasions. He was polite, attentive and nothing was too much trouble. We have two children with different food allergies and he was fantastic. His knowledge and care was so appreciated. Dining out can be so difficult with kids and without adding in allergies. He even searched for a blue crayon for my 5 year old who needed all the colours for her rainbow. Thank you David, you made what was already an unforgettable stay even better. The food was of course delicious too on both occasions.
