Went to try a new restaurant. We had the salad with shrimp. Very good. My friends had the fish and chips. He said it was wonderful. I will come back with a bigger appetite next time. Thanks for the special birthday cake for my sister. It was fun. Downside is that there was a group of about twenty with small children. Crying kids at a restaurant doesn’t work for me. Not there restaurant’s fault. I am happy to see a place that has higher quality of food and selection. Great for the Valley.

Everything was awesome! From the moment you walk in to the moment you leave, you really feel like you are on a journey. Staff was attentive, helpful with suggestions, professional, kind. The Chef was accessible, took time to take pics: just an overall positive vibe. The service was on point. From appetizer to dessert, everything was fresh, appropriately timed, and so good!

We decided to eat at Castle Hill because we thought it would be quiet and all would be a great experience. Unfortunately, it was loud and we sat right next to a group that sang karaoke for over 1 hour. If the restaurant is going to allow karaoke, it needs to be in a separate room and not in the restaurant. Castle Hill needs to be an eloquent experience. I will not be going back.

This was our first time here and it did not disappoint! This is such a wonderful addition to the Rio Grande Valley! I had the pork steak and my husband had the seafood macaroni, both were so delicious! The pork was very tender, not over cooked and flavorful! The macaroni came in a small Dutch oven and had clams with it, it was bubbling and crispy on arrival to the table. We went when Halloween was being celebrated. The restaurant was decorated and the staff were dressed up in costumes which made it extra festive! We look forward to coming here again in the near future.

This is my second time to the restaurant and I really enjoyed it. I did miss the baked Alaska option as a dessert. Last night I did not order any of the dessert options they had, that’s not to say they don’t have good options it was just not for me.

Outstanding food and service! The scallops were exquisite and my husband said the steak was the best he ever had. Everyone in our party had a wonderful time and enjoyed their food.

Plating and presentation was outstanding. Appreciate what the chef is trying to achieve, but some of the flavor profiles didn’t work for me. I tried the wine paring unfortunately 2 of the wines had been corked and turned. Desserts were very good. I will go back and try again.

Had the ribeye with the crispy onions and potatoes. Really nice sear on the steak and those crispy onions on top add another level of texture I didn’t know I needed! Good cocktails also. Love this place for us in the RGV and I hope it continues on strong.

We ordered brunch and the bacon wasn't crispy as requested, had to send them back, the beans tasted like they came out of a can, they had a weird taste to them, and the eggs weren't cooked as requested.

This is our second time there and we love the spicy nachos! Unfortunately we will not return my pasta had no flavor and we just had to constantly ask for the basics. Napkins , water , coke refills , We also took kids this time and we understand there’s no kids meals. I asked the waitress what do kids usually get and she was just abrupt answering anything on the menu except burgers and steak. Like I said this was our second time and the first time we went we were treated like kings .

Great Saturday evening dinner at Castle Hill! Had the tasting menu with wine pairing and really enjoyed. Wife had the linguine and she said was amazing. Love this place.

Love, Love,Love! Salads are amazing. Calamari so damn good. Burger is top. Really good cocktails. Servers super attentive. So glad we have this spot in the RGV.

Castlehill Bistro is definitely bringing a touch of fine cuisine at a reasonable price. From the drinks to the appetizers, to the main course, and the delicious desserts, our first experience at Castlehill Bistro was a delight. Thank you to Chef Campbell and his wonderful staff for serving us a fantastic dinner. We will definitely be coming back.

Great service! Great drinks! Fried calamari was soggy/mushy. The rib eye was interesting...not bad, but not good either. It was definitely cooked and marinated differently than I've ever had a steak before. My wife got the scallops and those were solid. We went for the souffle and it looked great, but the inside was mostly still liquid. We still drank it, but it missed the mark. We did go on a Friday, so maybe they were just having a tough day in the kitchen? Overall, we will probably go back for drinks cause we like to support local business. Enjoy!

I was pleasantly surprised ! The service was friendly and professional. Had a refreshing delicious cocktail and Chardonnay. The food was delicious and the prices were reasonable. Even met the chef who is totally approachable and friendly. It was a lovely evening overall ❤️

Shared we were celebrating a birthday, no special attention. Our reservation card is as written in marker on plain vanilla index card. Food was not up to expectations, good but not over the top. The Waldorf salad was very good though.

Consistently served warm champagne at this place. Even after asking what is already chilled and ready to drink, we were given a bottle off the shelf in a meagerly filled ice bucket. Food is decent. Dessert was better. Still don’t get the 3% card fee I’m charged here. Still holding out hope

Excellent place , I’ll suggest to change the TV a little bit the Netflix series where the chef used to e is ok as a Marketing deal but once you been there it becomes redundant.

As I had asked for some vegan versions of some recipes I can not give an opinion on their food but got upset of the charge of 3.9% for credit card use!!!

Was excited about trying this restaurant and I'm so glad it did not dissapoint. We had a reservation on a Saturday evening and we were seated promptly. Restaurant has a cool and relaxed vibe and a friendly host. Our waiter did not seem too well versed on the menu but he was courteous, friendly and checked on us throughout the meal. We had the Lamb burger with Cajun wedges (delicious and well seasoned but I feel arugula instead of iceberg lettuce would make it even better) and the Baked Seafood Mac (also great and probably order it next time). Hope for continued success because definitely would like more of these types of restaurants in the valley.

This is not a Bistro. Sports bar vibes with noisy music and loud people that takes away from the dining experience. Otherwise food was ok.

Went in for after dinner drinks and dessert. Champagne was decent but over priced. Desserts were innovative but need further development. The Baked Alaska appears to be a play on street corn; interesting sweet/salty interplay. I don’t think it was a Swiss meringue on top though—just whipped egg whites if we talking technicalities. The soufflé was soupy. Not exactly underdone. But not exactly set either. The ice cream melted deep into the center defeating the purpose of the crème anglais that was served along side. Interesting and new take on tres leches not seen in the Valley before. The chocolate torte was decent with a smooth texture and nice flavor. Rich and perhaps a little understated. Paid for a reservation on OpenTable but did not get a credit on the bill as stated. Also, 3% credit card processing fee? Where did that come from?

The ambiance and the meal were perfect—a great place for a date night. Appetizers, meals, and desserts were brought to the table in perfect timing. Everything was freshly made. Amazing experience. We even met the Chef.

Chef’s amuse was tasty- sweet potato and coconut “bisque”. Salmon was overcooked. Bone marrow aged beef was lacking flavor and not prime or angus quality or better. Both desserts were very good - particularly the mazapán ice cream with dark chocolate cookie. We went for Valentines day dinner so this prefixed menu may not necessarily represent their potential so we will try them again.
