It all started in the late 1800’s.. a young Gustav Johann Garbe got on a boat from Bremen, Germany to New York, destined for the North West Territories of Canada. Gustav stood up and stood out, always with family, friends and community at the forefront of his mind.     By far one of the best meals I’ve ever had, my husband and I were more than impressed and cannot wait to go back. Not only was the food cooked to perfection, appropriate portions and delicious but our server (Madeline) was amazing!! Can’t wait for my next visit

    We had an online reservation, and were seated as soon as we walked up. The restaurant was almost empty, which was good with us. I had their French Onion soup as a starter, and give it a 10/10. One of the best French Onion soups I've ever had. It came quickly after ordering, and almost as soon I was done, they brought out the main course. My husband and I both had their top sirloin steak with seasonal vegetables, requested to be well done. The flavor was amazing, but the steak was slightly undercooked for my liking. The vegetables were good. I'll give the main course a 9/10 for taste. Would definitely recommend this restaurant to others.

    Very friendly server! Was a bit run off her feet as she was the only one. Regardless, she made us a mimosa and offered coffee right away. Had a great breakfast. Restaurant was very clean and comfortable. We will return!

    We did dinner two nights in a row, and one breakfast. Sunday night dinner was good, possibly 4 stars. Steaks were on par with The Keg, though pricier. We weren’t blown away, but neither were we disappointed. Service was excellent. Monday breakfast was good, food on par with a decent diner. Service was once again excellent. Monday dinner was a train wreck. Calamari was so salty as to be inedible (we weren’t charged for it). Both orders of baby back ribs were cold. The Vodka Penne was good. Once again, the service was excellent.

    Seven of us came for a great meal and we had just that…. It did take an extremely long time to get it. The meal was good, right down to dessert. The steaks were cooked to perfection and the pasta and seafood were spot on. Crème Brûlée was made in house and was remarkable. There was a few simple mix ups, as that can happen with a big party. We would communicate with the waitress and she would not finish listening to our issue or apologize for the mix up, bad drink or undercooked potato and walk away before we were finished talking. Not the end of the world, but our entire table took notice. We were also there almost 3 hours. It wasn’t very busy when we arrived but a table of 2 and a table of 4 that we could see- were seated after us by 30 minutes received their bills after dessert, before we received our entrees. We waited over an hour and that was truly disappointing. “Steaks are resting, we will be out shortly.” When the food arrived, the steaks were warm- they obvious sat too long. We like coming here but next time we have a group, we will venture somewhere else.

    Food was fantastic, waiter was amazing! I have zero complaints, we really enjoyed our food and our waiter was very nice and helpful. Definitely a bi pricey, but worth it and will return! So much better than the keg 💯

    Delicious steak and potatoes of many kinds, sizes and for good value. We'll go again. Ask for less salt or don't salt the food until tasting as chef has a seasoned crust on the steaks that doesn't require more salt and pepper. We loved the seasoning but our waiter thoughtfully brought that to our attention. Some folks might need less salt so go carefully.

    On Saturday night July 15, Bob and I started with a shrimp cocktail with a warm bread plate, and then the new SUMMER CHEESE ANTIPASTO BOARD. Along with a bottle of wine and the best servers ever, we had 2! coffee and Crème Bruleee and a decadent chocolate cake to top off our evening..

    First time, will come for dinner next time.we had lunch, my wife ordered the prime rib sand which was not available so had the fish and fries, the fish was a bit mushy as if it was frozen or not dried before cooking, everything else was great.

    Our last night in collingwood we had to come to Gustavo chophouse. Was the best surf and turf I have ever had, rib steak was perfectly cooked and melted in your mouth. The lobster was delicious perfectly cooked. The appetizer was yorkies stuffed with mushrooms. They were delightful. Best steak house I’ve been to. Well worth the price.

    Service was extremely slow on our visit. Waited over an hour for our food to come out. Was out of the smaller steak portions. Would help to provide bread while guest are waiting if the kitchen is backed up. The bread we ordered also took a long time to come out.

    I was extremely surprised at some of the best cook steaks we ever had… 2 each of Filet’s and NY strip done perfect. Appetizers were also great and desserts exceptional. To get picky… ambience is a bit dated…open room began to get a bit loud…a rug or wood floor would have kept down the noise…the menu on your phone a bit of a nuisance especially when weather warnings went off every half hour or so. Manager came around and asked each table how things were and thanked them for coming…which was nice. A bit pricey but don’t mind paying for very good food and good service. Advice: use real Clamato juice for the Caesar not the watered down stuff from a fountain…it makes a huge difference in taste. We will come back!

    The wait staff were excellent and professional. Once we had our meals the server asked how our food was. My sirloin steak ($47) was very chewy I told her. Asked if I wanted it replaced but I declined another of the same. We didn’t say anything of the rest, baked potato needed another 20 min as it was firm. Sister ordered garlic toast, which came hard bread that had been grilled, lacked garlic butter. Escargot had good cheese top but lacked garlic butter. Three meals comped at different tables while we ate. Staff handled it very well.

    We arrived and were seated in the private dining room. The waitress was very very good and we had our salads and our drinks in a timely manner. With lots of guidance we selected two different steak orders ( we were a party of 5) which were delicious. It was my birthday and the evening ended with an express martini for me and a Happy Birthday board with a delicious slice of cake and a candle. It was wonderful. We enjoyed the entire experience and will definitely be back.

    When considering a referral to Gustav, I would simply advise to avoid the Alaskan Crab legs as there is simply no value to it at all. The flavour was good but to have 1 large leg and one very small one put in front of you with one side dish of mushrooms for $138, that is simply robbery. I would be surprised if my meat added up to 3/4 of a cup in total. You'd be better off removing it from your offerings if you can't offer a better value rather than disappointing a paying customer. Aside from this issue, the food was good, our server was very attentive and friendly and the kitchen staff (Austin) did the most amazing job on my bday cake presentation.

    Fantastic Mother's Day Buffet with sushi, fresh shucked Oysters, the world's most tender beef brisket, freshly made caesar salad and Asian noodle soup bar. Our waitress was awesome. Mimosas were great too! Hoping they do it again next year. 5 star experience and great service.
