Trying to be haute cuisine without the execution. The ideas are there, but they need a chef who can actually cook arctic char or duck properly. Beautiful hotel, but also needs updating (the speakers in the dining room were crackling). Highlight was innovative squash-based dessert.

Le brunch du dimanche s'est transformé en des repas 2 ou 3 services au choix. En fait il manquait une touche sucrée dans le repas 2 services. On nous a dit que c'était à cause de la covid, mais il existe des buffets où on nous sert!!!! Par contre la nourriture était excellente: on a pris les betteraves au chèvre, la tartine de saumon fumé, les œufs bénédictine au confit de canard et le gigot d'agneau. Ce dernier, cuit sous vide était particulièrement remarquable. Le service est gentil mais débutant, ils ne trouvaient pas notre bouteille de vin, n'étaient pas capable de répondre directement aux questions et on n'a pas eu le jus d'orange qu'on avait commandé.
D'un autre coté, la gestion de la réservation est vraiment déficiente. On avait réservé une table pour 2 et on a appelé pour ajouter une troisième personne. On nous a répondu que ce n'était pas possible à cause de la covid et que c'était complet. Quelle a été notre surprise en voyant le restaurant à moitié vide avec notamment une table pour 4 qui est restée vide!!!! De plus, on aurait pu aisément ajouter une chaise à notre table comme on l'avait demandé et ainsi respecter la distanciation. Donc perte de revenu pour le resto et perte de plaisir pour nous. Dommage.

Dining at Le Hatley is a special experience. The location at the lake, excellent service, and the nice building add to it immensely. My husband had the clam chowder, the halibut, and a dessert, which he said were all excellent. Only the smoked maple icecream was not a repeat for him. I had the octopus and Duck Margret. Both were cooked to perfection, but I did find the bacon overpowering the octopus a bit. The dishes are "terroir driven", as described on the website. The chef certainly excels at using local ingredients like lentils, and my husband loved it, but me not as much. My Okanagan Cherry dessert was inspired by a Blackforest Cake, and the Kirsch helped with that, but I really struggled with the extremely hard base of the dessert. Nothing like the fluffy original. I was afraid the whole dessert would just fly of my plate, when trying to split off a bite. Well, I guess that's what they call adventures in dining.

It is always a pleasure to eat here. However, we found that the appetizers and turkey were very salty. The beet salad was divine, and the service was impeccable.

Service excellent mais nourriture très décevante ...
Le la mise en bouche au repas principal nous avons été déçus .. nous avons même quitter avant de prendre le dessert. Nos attentes étaient très élevées du au prix exorbitant de ce restaurant et malheureusement ce n’a pas été à la hauteur de nos attentes.

Déçu par les plats.
Nous avons pris le menu dégustation et nous n’avons pas aimé deux plats dont un car il était pas mangeable. Nous mangeons souvent épicé mais là je pense que le chef s’est oublié sur l’assaisonnement.
Nous nous attendions à plus de finesse dans les plats.

Totally spectacular dining experience and less than an hour north of the USA/Canada border with Vermont. You might as well be in Paris -- with a lot more snow of course.

If Michelin finally comes to senses and starts reviewing Canadian restaurants, this one would be 3 stars for sure. Everything is absolutely outstanding about this restaurant. We were on a ski trip at the Northern Vermont and decided to cross the border for dinner. We glad we did it. Marvelous food!

Un service extraordinaire, le personnel est très intentionné, la seule description des plats offerts vous met l'eau à la bouche, et la nourriture est sublime. Les conseils du sommelier sont à propos et les choix offerts sont excellents. Une magnifique carte des vins est présentée avec des choix pour tous les gouts et budgets, Vraiment une extraordinaire expérience de saveurs et de finesse.

La nourriture et le service étaient excellents, quoi que j’ai trouvé le personnel plus accueillant au service du matin vs celui du soir. Très belle ambiance et décoration. Mon conjoint et moi avons trouvé les portions petites au service du soir.

If you are looking for a romantic place to dine, this is it. We've been three times now and this is where we go for a quiet, romantic dinner where we are pampered by the most amazing staff I've experienced in my time of going to restaurants. We had the Discovery Menu (Chefs tasting menu). Every course was better than the one before it, and the som picked the perfect pairing for every dish. This place is certainly a luxury, but I would highly recommend you treat yourself to this experience.
