Sushi is amazing. Not cheap but you get what you pay for. One of the best sushi spots in the city. Open window made for a great relaxed breezy lunch.
We were here for brunch to celebrate our anniversary. We had mentioned this on your reservation form but no acknowledgement by the staff was given. Not that this should be expected but most places do ask if you're celebrating anything when you are seated. Otherwise the service was prompt, polite, and not intrusive.
The live music is always nice and the decor is clean and uncluttered. Food is pricey but you're paying for the downtown location, and the food is generally very good. We appreciated the creativity of the dessert ("oysters" on the half shell with a plum gelee), but the flavours were muddled. The variations on benedicts were tasty, especially the salmon benedict. The fish is of high quality. The drink pairings were a nice option, though I wish more attention was paid to constructing some of the non-alcoholic pairings as most of the time they just removed the alcohol component and increased another component (which makes sense if the drink still tastes balanced but one of the drinks had yuzu in it, and without the champagne was very sour and not pleasant to drink). Overall we will be back because we enjoy the ambiance, but I wouldn't say the staff went out of their way to make our special occasion extra-special.
We loved our omakase lunch here and would definitely come back. The music, service, and food was all beyond our expectations!

Table was very wide, made it harder to talk to person across the table when it was noisy.
Impeccable fish in thicker cuts than usual with excellent rice.

Ignored upon arrival, 3 staff members chatting with their backs to us and ignoring us. When I said we have a reservation , "should we just seat ourselves?" I got back, 'No , she can help you ' with a point to another girl 3 feet away and then I was shown her back again while she continued her conversation. Never , ever has anyone greeted me so poorly in any restaurant. Fast food restaurants are 200% better at 'Hello ' than this experience. Food was excellent, Service at our table was weak, at best but passable. The experience upon arrival was so bad I would not recommend ever going to the Raw Bar and that is a shame. As I said , food was excellent , too bad the service does not match.
Came in for easter and had the 5 course meal with drink paring the brunch was amazing and the price was unbeatable. Our server was the friendliest server we had in Vancouver. Everything about the entire experience was one that I will remember.
Japan Unlayered Gozen Lunch was an amazing experience. Unique cocktails，gorgeous plating presentation and delicious food. Fantastic chic atmosphere.
It was a very busy afternoon and seems like not enough servers working, had to wait a longer than usual time to see my server.
I came here for another fancy Friday lunch and was pampered by the outstanding service received. Ordered the Steelhead Salmon & Shrimp Donburi, which was great. Server came by later and asked if I would like to check out some dessert and left me the menu. I was actually interested in getting one; however, server took a bit longer than usual to take my order and I had to refuse him because I need to go back to work! The server later dropped by to take care of the bill and came along with a complimentary mini dessert to say sorry for the wait - wow! thats some great service! considering i'm not a tenant in the hotel, and was not dressed fancy! Great experience!!
first time coming here for lunch, by myself. had the best service from the Raw Bar! ordered the Chef's Omakase lunch and it was delicious! i was very full afterwards. the food def worth the price. live music during lunch was great too. already planning my next visit here.

Sushi itself was excellent and expertly done. Service was sub-par on this day. They spilled beer while pouring it. They were out of a sushi item which they informed me then they charged me for it and I had to ask them to remove it. I think people think it's at the Fairmont so it will be amazing. My expectations were a bit too high after seeing everyone writing glowing reviews of the Fairmont and the Raw Bar. I wanted to book for about 4pm but apparently they were 'booked' thru Open Table so I got a less ideal reservation at 3pm. When we got there, they had so many open spots even at 4-5pm. What was that all about?
I was expecting something special, especially at the price-point, which is significantly higher than comparable restaurants. While there was nothing wrong with the quality and presentation of the food, it was unremarkable and undifferentiated.
Had the service been even reasonable, I could have tolerated the outrageous price point of the food choices in this restaurant. However, we walked into the restaurant and there was not a single other customer than ourselves, and there were three waitresses on duty. With that ratio, you would think the service would have been on point. No, to the contrary - we had to wait and wave one down to even bring us a drink. Then, when we asked for a menu, she only brought us one (there were two of us). The waitresses were standing around, talking, polishing cutlery while we were the only customers in the place waiting to get our order taken. We were on a quick lunch break from a nearby conference and wanted to get in and out and enjoy some delicious sushi - which is normally my experience at places like Globefish and Ki in Calgary. I was truthfully dumbfounded by the terrible service at the Fairmont Raw Bar. Especially considering the prices were outrageous - $20 for the one sushi roll we ordered. When the waitress asked if we 'both wanted tea', we said yes assuming it would be like most places where they bring a teapot and two cups. Nope. She eventually brought two teapots - and when we got the bill,the bitter tea we were served (could barely drink one cup) cost us $12! For tea! We had ONE sushi roll to share and two cups of nasty bitter tea and it cost us $33 plus tip. Again, had we experienced incredible, engaging, polite and grateful service, this might have been excusable - but the fact we had to wait so long for service and then to pay was just ridiculous, given that once we ate there was only 1-2 more customers in the entire place. Step up your game, Raw bar, and train your staff or hire quality staff who understand customer service. We expect more when paying these prices.
Expensive. Good. Would recommend other seafood sushi places in the city but do like their vibe.
