Was super excited to try, appetizers were so-so, wine was wonderful, took 45 min for our entrees to come out after appetizers which was frustrating- and then another 25 min for a dessert that was pre-prepared. The server was very nice and apologetic and took care of the dessert for the wait but we missed the northern lights as a result. Super noisy, and long wait times.

Natalie from Australia was our delightful waitress. We discussed world geography and travel with her. She was very patient with us, and assisted our selection of the pickeral special and the grilled bison. We enjoyed escargot and a salad to start with. The generous portions left us with no room for dessert, but what a lovely view of mountains we had overlooking the terrace while dined!

Great, delicious selection, especially cheese and seafood options. Excellent roast Salmon and prime rib. The best dessert was the chocolate tart/torte. Quick to replace empty trays/bowls. boeuf bourguignon was just ok, it was chewy

The Vermillion room provided an excellent brunch buffet with a spectacular view of Banff spring mountain. The bakery items were top notch. The beef striploin were devine and delicious. The restaurant has a pleasant ambiance similar to a French restaurant that I have been to in the past. I also love the big and over the top flower arrangement.

We had the Alberta Beef French Dip Sandwich. We were pleased to be able to substitute salad for fries. The beef was good; I was expecting exceptionally good given the venue. The salad was good as well. We shared the Lemon Tart for dessert & it was wonderful! What we loved was th exceptional service by our server. I asked for a tea menu & told him what I was looking for. He went to the staff who serve afternoon tea, brought back & served the closest tea to what I was describing. I asked for a more dark fruit flavor & he brought me another pot which was fabulous! The staff were very busy attending to a busload of patrons in the next room, yet we felt as if we were our server's only table. Kiddos to our server whose name I could not quite catch. It started with an 'X' & it's of Serbian descent.

Very disappointed, we were so excited to get dinner at the Vermillion Room in the iconic Banff Springs Hotel. The ambiance was nice but everything else was not good. The bread tasted like airplane food, French onion soup had no flavor, and our main dishes took a full half hour to come out and were cold when we got them. We paid top dollar for food that would be mediocre even at a fast casual restaurant.

We went here last night for my husband’s birthday and the service was absolutely terrible. We ordered four items as soon as we were seated, it took over an hour and half for everything to come out. The oysters were small, grilled octopus was good, lobster gnocchi was trash, braised short rib was good. The $18 wine pour was only a couple ounces. No remorse from our server, or the manager. Overall, extremely poor experience for the amount of money spent for a special occasion.
