• Gyokuro Cold Brew$7.00

  The name "Gyokuro" translates as "jewel dew". Our Gyokuro is ideally produced in the Yame district due to its suitable climate and environment. Just prior to the new tea buds growing, the Gyokuro tea plantation is covered by cloths to protect the tea leaves from direct sunlight for 20 days so that they may increase their theanine production. This is TSUJIRI's proposal to bring in Gyokuro tea to be enjoyed in daily life

  Kabusecha leaves require special care–farmers use straw mats to protect the leaves from direct sunlight for approximately 7-10 days before harvesting them. • Zaru Soba$10.00

  Basic and simple way of eating chilled soba served on zaru (draining tray made out of bamboo) with sobatsuyu sauce (dark brown soy sauce based soup. Kelp and bonito broth are added for additional flavour) and seasoning. Dip cha-soba into the sauce and appreciate the aroma. You can also enjoy another flavour by adding wasabi, green onion, and shredded nori (seaweed)

• Tonkotsu Soba$13.00

  Contemporary ramen-style chasoba in a hearty soy milk tonkotsu base, with sliced pork, chives, leeks, bean sprouts, and special okazu chilly oil. Tonkotsu is a noodle flavour originated in Fukuoka. The soup broth for tonkotsu ramen is based upon pork bones, and "tonkotsu" means "pork bones". Traditional Tonkotsu broth is made from pork bones in boiling water for several hours. It makes creamy broth with rich pork flavour

  Poke soba is a meal inspired by poke bowls from Hawaii applying cha-soba instead of rice, which makes it healthier.   A bowl of cha-soba topped with nishin (herring) simmered in sweetened soy sauce, fish cake, and green onion. The flavour of nishin makes the soup richer. The soup base is made out of bonito flake, kelp, soy sauce and a few slices of yuzu (Japanese citrus fruit).
