    What a wonderful restaurant! The cocktails were perfect, the food was incredible and the service couldn’t be better. The only “problem” was deciding what to order since everything on the menu looked amazing. We can’t wait to go back to try other menu items. And our waiter, Brandon, if you get a chance to sit in his section you will not regret it!

    This was the best food we ate over our 4 night stay in Galveston. It’s owned by Paco, who also owns the restaurant across the street called Rudy and Paco’s. We didn’t care for the food at R&P very much even though the reviews are great. Hard to believe the same people own both restaurants.

    Vargas is arguably the top high end resturant on Galveston Island . From the quality of their cuts of meat and selections of fresh seafood . Their offerings, while not extensive are more than satisfying for the most discerning of tastes . The attentiveness of the waitstaff is near perfect ( Thanks Blake ) and synchronized serving makes it special. Still there is always room for improvement. I had soft shell crab, with an outstanding presentation . The cost was higher than any of their non wagyu steaks on the menu, but worth it ! However, the suggested presentation was over mashed potatoes ( Really? ) . The good news is they had no issue in substituting the potatoes for a small portion of angel hair pasta with a light lemon burre blanc ! IMO a better pairing . My wife had lamb chops ( among the best we ever had anywhere , no side sauce necessary . The lobster mac and cheese was good ,however the cheese took on pink tinge and the flavor (from sweet red peppers? ) took away from the generous lobster within ! We loved the half bottles of wine , which made it easy to have a variety of wines with the meal , very much appreciated for a party of two and found the selection different and more interesting than the wine by glass list. We dinned early and the resturant had a lot of light coming in from the windows . Light diffusing shades or even curtains would have made the experience more intimate and cozy . All in all an outstanding resturant for a special occasion . Definitely a top notch special occasion place . We will visit again !

    Tremendous experience from hospitality, bar beverage program, and menu. We usually go into Houston for special dining experiences. Galveston now has one our favorites that will be in our dining rotation. The scallop and lump crab on risotto appetizer was amazing as were the fried green tomatoes with lump crab. Cesar Salad was second to none as was the lobster bisque. Beef filet special perfectly cooked to medium-rare. Snapper with pasta has excellent seasoning as well. Creamed Corn and pablano sweet and salty with cotija cheese was yum!!! Top notch experience all the way around.

    From the moment we walked in to the restaurant, we were impressed. Beautiful modern reimaginings of art deco with bronze/golden fixtures throughout. The service: our server as well as the other servers we saw around the restaurant were extremely attentive to their tables without being overbearing. They clearly had good knowledge of the menu. The food: We started with an appetizer of bone marrow which I highly recommend. Four out entrees, I had a ribeye steak cooked exactly as I asked (MR) and a side of mac and cheese. A great selection. My wife had the salmon which was paired with selected vegetables. We were both very pleased. We were treated to a piece of red velvet cake as it was our anniversary and it was great. We also had to indulge ourselves to their specialty dessert, a cinnamon ice cream scoop over an espresso cake with a hard chocolate dome covering the treat, a hot chocolate was drizzled over until the dome melted. Delicious. Drinks: I had a simple old fashioned which was well done. They have a wonderful selection of hard to find whiskeys, and the wine selections were more than extensive. At one point I snuck off to the restroom where I noticed a press to pour bottle of louth rinse with individual disposable cups next to it, a great addition. Overall we rate this restaurant as a must try if you are in the Galveston area and looking for something more upscale than the usual beach vacation hot spots. They do have a dress code so please check with them about proper attire before planning to come.

    This was our second time to eat at Vargas Cut and Catch and we will continue to come back. The food and service are top notch, and the dress code is a nice change of pace. It's a date night, special occasion kind of place. We had a Wagyu and lobster chef's special that was quite a treat, enjoyed the Vargas Chopped Salad and the parmesan crusted asparagus topped with lump crab that was to die for.

    Awesome food. The filet was amazing and my wife had the seafood feature of the day. Really good. And the service was extraordinary and the ambience was perfect. Wonderful anniversary celebration.

    Fantastic service (Blake), scrumptious food (crab/shrimp martini, blackened shrimp, and steak/lobster special). So nice to be in a place where people are dressed nice to go along with the white tablecloth ambiance.
