True to its name, the Chef’s Table feels gloriously indulgent, inviting lucky diners on a hedonistic journey encapsulating Antonio Pérez’s life in Puerto Rico and his culinary career across South America, Europe, and Asia. The setting feels intimate and wildly special, with just 12 seats surrounding the open kitchen, complemented by a lounge area for a welcome cava before dinner or a post-tasting menu digestif. The themed-driven five-course menu changes monthly along with its wine pairing.
This is not merely another dining experience; it’s an intimate journey through the heart and soul of a Puerto Rican cook and his global culinary influences. Do not reserve a number of diners higher than desired, in our kitchen everything is prepared for all confirmed reservations, as such, we will regard it as a no show who has failed to comply with the reservation. If you wish to cancel your reservation, please give us at least three day’s notice. Thank you for your kindness and understanding.

Next to the 'Old Mill' in Aruba you'll find a unique new restaurant, 'The Journey'. Michelin star trained chef Patrick van der Donk (old Amuse Bistro) has made a very intimate chef's table concept.

Credit card information will be required in order to hold reservation as well confirmation by phone .

Not your usual bar seating set-up! Here you are able to dine at you own separate tables and still have a view of the chef creating your 5-course meal for a max of 20 guests per evening.
Price $130 per dinner and $80 for the optional wine paring, small bar available.
The evening starts on our cozy lounge with delicious hors d'oeuvres and bubbles, inside at a small and stylish set-up the chef will prepare every dish in front of his guests taking time to invite his guests over for a chat, he might even ask to help plating his dishes which gives a truly extraordinary dining experience. The menu changes frequently, classic dishes with a twist prepared with the best ingredients.

Chef Patrick, Jeremy and Ada provided an amazing experience! We were greeted outside with a glass of champagne where we mingled with other guests. Upon entering the restaurant, we had our own table however the atmosphere was intimate and we were able to see the courses being plated. Every course was incredible- the flavours , textures and presentation. We highly recommend this experience. Chef Patrick is incredibly funny, humble and approachable. The entire team was genuine and fun to engage with. Thank you for making our evening special!

The food is top quality. The presentation is fabulous! We ordered a few appetizers and two main courses-everything was spectacular! I would come back again and again! I wish the had restaurant in NY. Excellent meal from start to finish. The tuna tartare was amazing, as was the spaghetti with duck ragout. Stuffed calamari, develed eggs and lamb meatballs were also very good, although you only get 4 tiny meatballs, so not convinced of the value on that dish. Our first visit, but not our last for sure. Mate our server was also great.

A very unassuming place that just seems very run of the mill. Once you sit down though the servers take over. They suggest drinks you might like and they know the menu inside and out. The food quality is good and full of interesting flavors. Definitely a place to come back to.

Always a great experience at highbourne my guest and I surely enjoyed, just one down fall the conch fritters aren’t conch fritters it’s more of a conch croquette so we were expecting authentic Bahamian conch fritters and not a conch croquettes.
