Isabella Billson’s story is somewhat unknown…In the mid 1850’s women weren’t part of the public picture. We know that she accompanied her husband George as they moved from England to California in search of fortune amongst the goldfields. The chase then took them to Bendigo, Australia, before Beechworth. Here they built a brewery, a business, a brand and a legacy that has lasted until today.We toast Isabella with the finest spirits, crafted into contemporary cocktails by our talented staff. Her gin - a specialty small batch spirit aged for 3 months in Muscat barrels - appears in the signature 50/50, a gentle approach to a classic martini. Chef Douglas Elder’s seasonal menu of dishes to to share provides the perfect match. The wine list is exclusively sourced from the surrounding wine regions of Beechworth, Rutherglen and the King Valley.Please note: Our cocktail bar is designed to be an adult-only experience.
